Bake Sweet Potato Fries

Super tasty, and are a great alternative to regular fries. This is super healthy, as sweet potatoes are often overlooked in terms of their nutritional density. They have tons of vitamin A and dietary fiber, as well as other trace nutrients and phytonutrients to boot.

Ingredients

4 sweet potatoes, sliced into approximately ? inch squares

3 cloves garlic, minced

3 tablespoons olive oil

2 tablespoons all-purpose seasoning

1 teaspoon cumin

Pepper



Cooking Instructions

Preheat oven to 400 degrees F.

Lightly grease two baking sheets. Place sweet potatoes on sheets and bake for 30 minutes. Once the sweet potatoes are soft, transfer to the top rack of the oven, and broil for 2 minutes or until brown.

Heat a large skillet with olive oil on high. Remove sweet potatoes from the oven, and transfer them to the skillet. Add garlic, seasoning, pepper, and cumin into the skillet. Turn often for 3-5 minutes. The sweet potatoes should become crispier, but be careful not to burn them. Serve immediately.

EASY FETTUCCINE ALFREDO

1 lb. fettuccine noodles
ALFREDO SAUCE:
1/2 c. butter
1 c. heavy cream OR MILK
1 1/4 c. grated Parmesan cheese
1/4 tsp. salt
Dash pepper

In large pot, bring 4 quarts water with 1 tablespoon salt to boiling. Add noodles; return to boiling. Boil, uncovered and stirring occasionally, until tender but firm. Drain noodles; keep warm.

To make Alfredo Sauce: Heat butter and cream in medium saucepan until butter is melted. Remove from heat. Add 1 cup Parmesan cheese, salt and pepper. Stir until sauce is blended and fairly smooth.
Add to drained noodles and toss until they are well coated. Sprinkle with remaining Parmesan cheese . Serve at once.
