Hearty Vegetable Stew

32 ounce can tomato juice
14 ? ounce can stewed tomatoes
2 cups water
2 med potatoes, unpeeled and chopped
15 ounce can garbanzo bans
15 ounce can kidney beans
1 cup lentils, cooked and drained
1 large onion chopped
2 tsp garlic powder
1 cup each red and green peppers, diced
10 ounce package frozen spinach
2 carrots, grated
2 tablespoons dried parsley
2 tablespoons chili powder
2 tsp dried basil
1 tsp ground cumin

In 5 quart pot combine all ingredients, bring to a boil. Reduce heat; simmer 45 – 60 minutes until onion, peppers and lentils are tender.



Recipe: Apple Burgers

Sweet, tart, and slightly crunchy, these apple burgers might sound weird, but they definitely taste good.

Yield 4-6 burgers
Time 15 minutes

Ingredients
2 tart apples, grated
1 c onion, minced
2 c bread crumbs
1 green pepper, seeded and chopped
1 T fresh ginger, minced
2 c brown or white rice, cooked (leftover is fine)
6 T rolled oats, ground
? t salt
black pepper
1-2 T vegetable oil
Directions Squeeze some of the juice out of the apples, then place in bowl with onions, bread crumbs, green pepper, ginger, rice, 3 T oats, salt, and pepper. Mix well.
Heat the oil in the frying pan, over medium heat.

Shape mixture into patties, adding more bread crumbs if necessary. Coat with remaining 3 T of oats.

Fry in 1 T oil over medium heat until golden brown, 2-3 minutes per side.

In a soup pot, combine the vegetables, water, onion, garlic, celery, butter and salt. Simmer for about 15 minutes or till the vegetables are tender.
Add the milk and mix well. Add gradually the cornflour mixed in a little cold milk or water. Keep stirring on low heat till it begins to boil. Put off the heat. Season with pepper.
Garnish with chopped parsley.
TIPS:

Garnish with a sprinkle of your favorite spice powder.
Serve hot with: fried bread croutons.
