I would say you're off to a good start. You have the protein, the carbs (switch to a whole wheat bun with grains), I would use spinach or a dark green lettuce, tomatoes are great because they have natural enzymes which aid in digestion, mayo is fine as long as it is not non fat or low fat, the cheese you could probably do without but it is so good, but the skim milk is not. An interesting fact about fat is that your body needs fat and does not produce fat. Skim milk contains denatured milk to give it its body. Low fat or fat free mayo generally contains a lot of sugar to make it taste half decent. Fat is okay, which the media tends to lead you to believe that it is not. Simple sugars are more of an enemy.
In addition to your sandwich, I think you need to add some nice salad with some nuts, fruit, nice dark greens and maybe some broccoli with a vinaigrette of your choice. A good salad would be spinach, toasted walnuts, goat cheese, roasted red beets, sliced apples and maybe some dried cranberries with a nice balsamic vinaigrette.
This would still be doable and also give you a more complete meal to make it through the rest of the day. Also snacks like an apple, banana, or some broccoli with a few nuts too munch on will help keep your metabolism up.
And this meal is neither vegetarian or vegan.
Just watch the cheese and the bun (make sure it's wheat!) Also, try easing off the mayo. Choose light mayo and eventually just do without it. Pink skim milk? Is that strawberry? I guess it's okay but if you just drink plain skim milk it'll be getting rid of extra calories and sugar!
