Very healthy. Additionally, have a fruit or two, or maybe even a leafy green smoothie with hemp/chia seeds for something that will last you more hours and give you instant energy.
And your protein and fruit is where? This is why vegan is so bad for you. Also the estrogen in soy is not good for females that are pre-menopause.

Very good. Be careful on which brand of coconut milk you get (go for "light") because sometimes it can be high in fat.
