Answers:
Plant-based foods contain all the essential amino acids and non-essential amino acids (building blocks of protein) in varying proportions, so as long as you're consuming a wide variety of leafy greens, vegetables, seeds, nuts, whole grains, beans/legumes, pulses, and some soy products throughout the day, and meeting your calorie needs - you'll be just fine on the protein.
Some foods, such as quinoa, amaranth, buckwheat, tempeh, tofu, edamame and hemp seeds contain all the amino acids that your body doesn't produce and are thus considered 'complete' sources of protein.
Seitan, which is wheat gluten (protein)! It's delicious, I like it mixed with veggie broth and steamed.
It's wayyy cheaper to make your own, just buy wheat gluten an add equal parts water.
Also, I don't know if you cook, but I found an awesome vegan sausage recipe. If you have all the ingredients, it's super easy to whip up and you can use it on everything. I put it on pizza (with Daiya cheese, of course), in a breakfast 'scramble', in a sandwich, and in spaghetti. The best part is that it doesn't have weird things and preservatives in it, and it's freaking amazing. My omni friends even enjoyed it. You can probably find all the ingredients at a grocery or health foods store.

Most things have protein. As long as you are eating a enough food and a variety of food, including beans, grains, veg, fruit, and nuts, you should not have to worry about protein.
Unless you are an athlete or on a weight-loss restricted diet, don't worry about it.
edit: Just found this YouTube vid for PCRM's vegan kickstart. They talk about protein in this one :) http://www.youtube.com/watch?v=bSe9cBi4A…
Definitely quinoa - it's my new found love!!! It tastes great in a vegetable stock and with some veggies thrown in there. It's also really quick to make.
There's of course tofu and bean products like you mentioned.
Good luck!
