I'm vegetarian, but I' thinking on going vegan for Earth Day, does anyone have any recipes?!

Question: I'm vegetarian, but I' thinking on going vegan for Earth Day, does anyone have any recipes?
I'm gonna go vegan for Earth Day, and I want to make a nice dinner. I'd like a vegan chocolate cake recipe, a vegan mac and cheese recipe, and anything else that might be good. Oh, and any tips from vegans will be nice. Who knows, maybe I'll keep trying vegan till I go vegan. :)

There are so many recipes out on the internet - the best thing to do is have a search and narrow down the ones you like.

There are great cocoa brownies, and chocolate cake recipes too - but you don't need to stick to the recipe fully - experiment!

You can make vegan mac & "cheese" mixing together nutritional yeast, miso, lemon juice, soy sauce, tahini and a couple of other ingredients to mimic the taste of cheese. Have a look http://veganyumyum.com/2007/10/mac-and-c… and this one http://veganyumyum.com/2009/01/mac-cheez… (version 2). I haven't tried either yet, but I keep going back to them because they look delicious. How about mini-baked vegan chocolate donuts for a treat? http://veganyumyum.com/2007/02/mini-donu…

TEMPEH. I love it, it's so tasty, and warm, and strong, and squishy beneath my feet...

Ahem. There's *LOTS* of Vegan Macaroni and Cheese recipes out there, each person preferring a different recipe. They usually use Nutritional Yeast as a base, some use Cashews... if you're feeling experimental, there's also a way to ferment Cashews with regular Acidophillius to create proper Vegan cheese (Dr. Cow makes this, expensive to buy, less expensive but trickier to make).

Replacing eggs in a recipe is easy, just use flaxseed, bananas, tofu... dairy is as simple as using Soy, Oat, Almond or any variety of non-dairy milks (nut/seed milks are easy to make at home. Just soak overnight, then blend with water, discarding the pulp, simple).

Personally, I don't see the draw of being Vegetarian. Dairy is very easily replaced, if you even feel the need to. It seems a lot harder than it actually is.

There's always the scare-tactic too. Y'know, being chicken periods and having a fair amount of cow pus present...
