What vegetables can I eat raw?!
So which vegetables can I eat raw? And which ones do you prefer? Are any of them tasty to eat?
The healthiest ones listed would be appreciated as well. Thanks.
Answers:
boiled or cooked vegetables are not fattening by being cooked or boiled.
Only if you add oil, butter or other fat, do the veg become MORE fatty than they are raw.
Kidney beans, do not eat them raw.
All vegetables except kidney beans.
Tastiest? Green peas, sweetcorn, soaked lentils ( technically legumes are fruit)
cauliflour, yellow peppers, zucchini and brussel sprouts.
Tomatoes and cucumbers ( also zucchini ) are fruit, so they don't count, but obviously they are nice raw.
SPinach is VERY nice raw, and kale.
Potatoes can be eaten raw- if fact they're really good.
GReen peas are probably my favourite overall raw veg- you have to shell them yourself or buy shelled and fresh. They're so good raw.
Dried beans can be soaked to a nice smooth creamy consistency- they take from a few days to a wekk- depending on size, to get that way.
Fava beans, aren't very good raw- they're bitter.
Chickpeas, lentils and all the rest are really good soaked- they plump up and have a texture like raw peanuts, or even softer.

green beans,
lettuce,

turnips,
swedes,
sweet potatoes,
these can ALL be eaten raw.
Mash them, puree them, add sauce, add condiments, add a bit of cooked stuff- rice, noodles, ( or have them raw too).
They're all tasty. They don't give off gasses in your digestive system either- this is true for all the carciferous veg- cabbage, spouts, broccoli, caulilfour, green beans.
carrots, celery, broccoli, cauliflower, onions, tomatoes (they are actually a fruit, but still), green beans, peppers!!!!, etc.
i like to dip carrots, broccoli, beans and peppers in ranch dressing. but they are still very yummy without any added flavoring. i put peanut butter on celery... added protein :D
its not that eating cooked/boiled vegetables are BAD and unhealthy; it just depends on how you cook them, with flavoring/spices/sauces, what else are you cooking it with... etc.

Any vegetables you can eat they won't hurt you
