Does anyone have a recipe for brown rice pudding?!


Question: Does anyone have a recipe for brown rice pudding?
I've been looking for one. :)

Answers:

Ingredients:
2 cups of cooked whole grain brown rice
1 1/2 cups of milk
1/2 cup of maple syrup or 1/2 cup of honey
1-2 cups dark raisins (optional)
1 tablespoon of unsalted butter
1 teaspoon of ground cinnamon or 1 teaspoon of nutmeg or 1 teaspoon of allspice

Directions:
1.In medium saucepan, combine rice, milk, syrup & raisins, if including them, and bring to boil.

2.Reduce heat and simmer for 20 minutes, stirring frequently.

3.Remove from heat and stir in butter and cinnamon.

4.If desired, garnish with additional cinnamon.

Baking it a "water bath" creates a delicious creamy version

3 eggs, slightly beaten
1 1/2 cups milk
1/3 cup sugar
1 tsp vanilla
1/4 tsp salt
1 cup cooked brown rice
1/2 cup raisins, dried cherries, dried cranberries, or a combination
groung nutmeg or cinnamon

1. Preheat oven to 325
Stir eggs, milk, sugar, vanilla, n salt with a wire whisk until combined...but not foamy.
Stir in rice n raisins/cranberries
Pour mixture into a 1 1/2 quart casserole dish. Place dish into in a 2-quart sq baking dish on oven rack.
Pour boiling water into the baking dish til water comes halfway up the sides.
2. Bake, uncovered, 30 min...stir. Bake an additional 20-25min,
or til a knife inserted comes out clean

I like to serve it with a Raspberry Puree...

btw...i'm not accustomed to writing recipes, so if i've made any mistakes i do apologize...



4 c. cooked brown rice
1/2 c. honey
1 c. dry white wine
1/2 tsp. vanilla extract
1/4 tsp. ground cinnamon
1 c. raisins
4 lg. eggs, beaten

Preheat the oven to 325 degrees F.

Combine the honey, wine, vanilla and cinnamon in a medium sized saucepan. Heat slowly over medium heat until the honey has dissolved, then add raisins. Continue cooking until mixture begins to boil, then remove from heat.

Combine the eggs and rice in a large mixing bowl, then pour the honey mixture and mix well. Turn into a greased 9x9 inch deep casserole dish. Bake 45 minutes to 1 hour. Top with meringue and bake until brown. Feeds: 6.
