You can make any non-vegan desert vegan with a few simple substitutions:
-use really ripe bananas where ever you would use eggs. Some health food stores actually have vegan egg mixture for baking.
-use soy milk wherever you would use milk.
-use maple syrup wherever you would use sugar or honey.
-use vegetable oil (but not dirty soy or canola oil--those are really pesticided GMO crops) wherever you would use butter or margarine.
That covers most deserts. I made pumpkin cookies for halloween that were delicious:
1) a pot full of pumpkin boiled until there are no chunks and almost no water
2) add cinnamon, ginger and whatever other spices you want
3) wait until that mixture cools and then stir in maple syrup and oats until the mixture is thick enough to stick to the spoon.
4) roll into little balls and put on a cookie sheet. cook until they aren't doughy anymore.
you can also look up a recipe for vegan chocolate cake called "wacky cake" (you probably find it on the internet). Most chocolate chips are vegan. Cocoa is vegan. There are many wonderful deserts you can make for vegans. Anyone would tells you that being a vegan means missing out on tasty food probably eats meat.

First of all, there is a super-rich dessert you can make from melted chocolate and silken tofu. There are tons of variations of this dessert (which turns out like a thick chocolate mousse) around; I'm linking to Alton Brown's recipe. You just have to substitute something (maple syrup would work) for the honey. You can make it with or without a crust.

Another very simple dessert that I like to do is to peel and section some oranges, place in a bowl with their juice and splash with rum. Then in a saucepan on the stove, heat sugar and water to the hard caramel stage, and pour into the oranges. This is from Alice Medrich's low-fat dessert cookbook.
Then, of course, all manner of cakes and cupcakes and brownies and cookies can be made vegan. Dreena Burton's brownie recipe from her cookbook The Everyday Vegan is out of this world--I've had omnivores tell me it's the best brownie they've ever eaten!

carmelized fruits, poached fruits, cobblers with vegan crusts, baklava, hmmmm. try berries berries sprinkled with balsamic vingear and dusted with powdered sugar. i think i am sensing some kind of fruit theme here. you can make your own vegan chocolate sauce but most chocolate processed chocolate has dairy in it -- like im telling you something you don't already know. lately i have been big on tofu ice creams. they are a lot better than they used to be. they are still kind of blah so i usually put extra chocolate sauce on chocolate mocha and extra strawberries on the tofutti cheesecake stuff. usually they are around the same area as haagen daz and ben and jerrys. OH! sorbet -- i forgot sorbet! im getting some now. chocolate sorbet covered in raspberries is so good!
OMG YES! And I was making this even before I became vegetarian! It's SOOO yummy!
Baked apples:
Cut a pie crust (any pie crust) into 8" squares. Place a cored apple on each square and fill with brown sugar and pecans or raisins. Bring the corners of the pie crust together at the top of the apple (wrapping the apple in crust) and pinch to seal. Bake at 350 for 40-45 min or until the apples are tender (stick 'em with a skewer or toothpick to test). I usually make a carmelized sugar sauce (melted sugar with a little water or margarine) to baste them with as they bake. YUMMY! Serve warm with non-dairy whipped cream (is that vegan??) or soy yogurt/soy ice cream, or just by themselves.
