Morning vego and vegan brethren! I need another recipe :)?
sorry guys. 4 weeks in and still cant cook falafel. last time i tried, it melted into the peanut oil. i added a little oil to the mixture though, so that might have been it.
does anyone have a really good, easy vegan falafel recipe? direction on how to cook it would be helpful too.

There is always the dry mix that can usually be purchased in the bulk food section at some natural food stores. Our co-op here stocks it regularly. If you have no luck with that, Try this...
1 19oz can garbanzos
1 small finely chopped onion
2 cloves garlic minced
1 1/2 tbsp fresh cilantro
1 tsp dry parsley
2 tsp cumin
1/8 tsp turmeric
1/2 tsp baking powder
1 c dry bread crumbs
3/4 tsp salt
1/2 tsp fresh cracked pepper
1 c oil for frying (vegetable is what I use)
Mash chickpeas in a lrg bowl. Stir in onion, garlic, cilantro, parsley, cumin, turmeric, baking powder, breadcrumbs, salt and pepper. Use those hands baby! This is where it is important for those onions to be really finely diced or everything literally falls apart. Shape mixture into 1 1/2" balls and slightly flatten. You should get 18-24. If the mixture isn't holding together well, just add a bit of water little by little til it does.
Heat oil in a large skillet to 375 (or med high). Carefully drop the balls in and fry til brown. Test a couple falafels first and find out if you've got the heat correct. Serve these bad boys however you'd like. I'm sure you've got plans..........

Do you have an objection to prepared falafel mix? I use the "just add water" stuff! Add water to the powder, let it sit for ten minutes, shape into balls and fry the little suckers! It's so simple! I can even buy the falafel mix bulk at the local health food store.
