How do you bake if you can't use eggs?

I'm a vegetairan and I might become vegan if I could still bake cakes and other things. some one told me need to use tofu? is that right, if so how?

There are a bunch of 'tricks' to replace the eggs in baking! Tofu replaces the volume of the eggs and works well for custard type pies but doesn't do much for cakes.

For cakes the 'organic' way is to use "Flax Eggs" which are made by soaking Flax seeds in water until they get 'gooey'. In season you can use the 'slime' from Okra to replace eggs.

Those methods work but my personal preference is to use (the previously mentioned) Ener-G egg replacer but it's weakness is that it only captures air to give lift but doesn't replace the eggs binding ability. I also add some Xanthan gum to my baked goods to replace that egg function and end up with cakes that are almost identical to eggy cakes. If you search Yahoo Answers (or way back in my old answers) you'll find my method for how to do this. You can also see my answer to a person looking for a red velvet cake recipe.
All those 'special' ingredients are readily available on-line or at health food stores. Xanthan may look expensive but it's used in small amounts and lasts forever with proper storage (and is almost ridiculously useful!).
Keep in mind that vegan baking is finicky and requires some technique changing to work and also experimentation! I have yet to see *any* recipe that works 'no-fail' every time! Feel free to email me for detailed tips/assistance.

no use mayonaise it replaces eggs and oil. And it makes the cake really moist use less mayo than called for eggs and oil.good luck and god bless. Happy Thanksgiving.

You can also use applesauce instead of the eggs. there are lots of ways to not use the eggs and things in there..

I know that some receipes substitute mayonnaise of all things, for eggs. I read somewhere that during WW2, eggs were all sent to the troops and the women at home, substituted mayo. but I can't help you as far as 1 tables. = how many eggs. I don't know the equivelents. Maybe someone else could have that answer. But you're on the right track now anyway.

Just as a note, a user above said to use mayonnaise in place of eggs and oil. Well, mayonnaise is essentially made of....eggs and oil. You basically blend eggs with oil, and it becomes mayonnaise. I know because I've made mayonnaise myself before. :p

A vegan product called Ener-G egg replacer works really well in baked goods. It can be found at health food stores.

Tofu, or a blend of bananas and applesauce can also be used.

Use condensed milk in place of eggs while baking cakes.

baking soda and vinegar is the secret. They react with each other to make your baking rise.

I just make a birthday cake 2 days ago, chocolate layer cake, no eggs, baked up super fluffy, with just 1tbls baking soda and 1 tbls vinegar - And dont worry, you cant taste it!

i personally am no longer able to eat egg products because of high cholesterol, but i don't let that stop me! i don't see many suggestions for this so maybe there is something wrong with it but I LOVE EGG BEATERS! i have used them in chocolate chip cookies, cakes, quiche, you name it.

here is one of my favourite egg beater recipes:

if you like eggs you should try egg beaters mixed with soy milk or not fat milk (if you drink dairy) with any veggies you want and some cheese (of course soy cheese as well) i make little "egg" cups with my cupcake pan. you can make them in advance and heat them in the morning.

just add some egg beaters and milk product pour in the cupcake pan add veggies and spices, a little cheese on top and bake at 350 until they have risen and are golden brown. enjoy!
