Heres a super simple and yummy recipe you'll love:
1 pkg extra firm tofu
1/4 c soy sauce
2 Tbsp maple syrup
2 Tbsp ketchup
1 Tbsp vinegar
1 dash tabasco or other hot sauce
1 tbsp sesame seeds
1/4 tsp garlic powder
1/4 tsp groud black pepper
1 tsp liquid smoke
preheat oven to 375. Lightly spray a nonstick baking sheet with oil. Press water from the tofu by putting it between 2 paper towels and setting a plate on top. Let that sit for about 15 minutes (helps the tofu absorb marinades better). Cut tofu in cubes (1/2 " or so). In a bowl combine all other ingredients. Gently stir in tofu cubes. cover. let sit 15 minutes. Place tofu in a single layer on baking sheet. Bake in a preheated oven for 15 minutes. Turn tofu and bake another 15 minutes.

Take one block of tofu and cut it into 1/4" slices. Place them on a folded kitchen towel and place another towel on top. Put a cookie sheet on top of that and then place a book on top. Let it sit for about 30 minutes to an hour while you make the marinade and preheat the oven to 350 degrees. Combine in a jar: 1/4 cup oil, 1/4 cup soy sauce, 2 cloves garlic, minced, and 1/8 cup of rice vinegar. Slice an onion and place in a baking dish (pyrex or glass works best for this). Top with the tofu slices and then pour the marinade on top. Bake 30 minutes. The tofu should be slightly chewy and very well seasoned. I like this with salad and rice. Enjoy!
i bake it all the time! i slice it, soak it in a bit of soysauce, then dredge it a mix of: flour, nutritional yeast and whatever spices I feel like that day. Stick them on an oiled cookie sheet and bake for 20 minutes or so at 350.
Tofu comes in different styles. For baked tofu you need to get firm or extra firm tofu. It will give you a chewy texture, with a slight soft middle. You can also boil it or freeze it/thaw it out for a more chewy texture.
Marinade is mandatory as tofu is tasteless, and is like a mushroom in that will soak up anything you maridnade it in. Slice tofu into less than one inch slices or cubes is great if you want crunchy squares. Then marinade it! Soy sauce makes it salty, garlic and ginger add a punch to it, and vinegar adds just the right amount of kick to it. A little bit of oil (high heat oil like canola or grapeseed oil - not olive oil) in the marinade is needed to get fats into the meal. 30 minutes of marinading is minimum, 3 hours is better.
Put in a hot oven of over 375 to 400 degrees in a shallow dish. Turn over every five minutes till cooked to where you might like it. I love mine very crispy on the outside, so I go till it is brown all over.
Marinades that are different: pineapple juice with balsamic vinegar and soy sauce (sweet and sour style), lemon zest with lemon juice, soy sauce.
I dip my (pressed and sliced) tofu in an herbed scrambled egg mixture, roll the slices in a mixture of breadcrumbs, ground almonds and herbs, and then bake them in the oven like Tofu McNuggets (until they're crispy on the outside).
