I want to test out eating Vegetarian...Any Good Recipes?
I though I would test drive being a vegetarian with my brother for a week.

The reason I want to try vegetarian is just to see what it's like. Plus I figure I would tough it out with my brother for a while.

Some of my favorite vegetarian dishes aren't really recipes so much as just a choice :)
Baked potatoes topped with steamed broccoli and shredded cheddar - serve with a nice tossed salad
Pasta (regular or cheese filled ravioli/manicotti) topped with roasted zucchini and marinara sauce, serve with Italian style salad greens and oil/vinegar dressing
Grilled portabello mushroom sandwiches - oil a portabello mushroom cap on both sides with extra virgin olive oil, grill or roast or pan fry it, serve on whole wheat hamburger bun with roasted red peppers and provolone cheese melted over it - make cole slaw on the side with a bag of cole slaw mix, use the recipe on the back to make a simple dressing.
Grilled veggie skewers - cut an assortment of veggies into large pieces (use red, green and yellow peppers, green and yellow squash, onions, fresh mushrooms, etc) marinate them in bottled Italian dressing, cook them on grill or under broiler until they're crisp tender, serve over brown or white rice
Red beans and rice! Have that and a big salad using avocado and tomatoes, cheddar and jack cheeses and a drizzle of ranch along with a scoop of salsa
Make veggie omelettes! Serve with fruit salad on the side...
Fettucini alfredo with a big side salad...
Baked macaroni and cheese with sides of green beans and glazed carrots - comfort food :)
The list is endless... and it's easier to go veggie than you think!

Plus, my favorite may not end up being yours. Consider the vegetables you really like and do searches using some of those so you are not inundated with recipes to sift through.
There are also countries whose diet is almost exclusively vegetarian, so you could really make the three weeks fun by dividing it up into various cultural cuisines! Often there are even styles of cooking within the country, like India, from not very spicy to VERY spicy.

Also, take into consideration the things you will not be getting by potentially cutting out ALL meats and perhaps dairy products (how vegan will you be?).

I am a vegetarian. I love the annies pasta and soups,. the morning famrs fake meat, and fake riblets.

You can go for Indian Vegeterian recipes. They are full of taste and nutritions.

A friend has a restaurant in an island and vegetarian tourists love it.
Tofu is a great substitute for meat, it has protein and it is very versatile. I like to make fried tofu steaks with various seasonings (I prefer garlic)and they are quite good.
Why do you want to be a vegitarian? Humans are omnivores, we need to eat meat and vegitables to get all of our dietary requirements. There is nothing better than a nice big juicy steak with garden salad on the side. Iron, Protein, Fibre and all the vitamins you can handle. Being a vegitarian isn't healthier, it isn't protecting animals from pain and suffering, it's just a new age bullsh'it fad that hairlegged tree hugging hippies want to be different.
Congratulations on your choice. Your body, the animals and the Earth will all benefit. Most major book stores have Vegetarian cook books. You can also do a search and buy some over the internet if you wish to continue your test longer than a week. Even if decide not to continue with the test, your body could still benefit from eating a couple of vegetarian meals a week, so the cookbooks would not be a waste of money.
If you can't afford, or don't wish to buy cookbooks, these sites all have advice and/or recipes for vegetarian and vegan food.

Many grocery stores stock vegetarian meat substitutes. You can find veggie bacon, burgers, hot dogs, sausages, and ground beef. (Some of these products do contain dairy or eggs, so check the ingredients list if you do not wish to include eggs/ dairy in your diet.) Morningstar Farms and Bocca are two popular brands that make vegetarian meat.
It may take some time to get used to eating vegetarian food. If you normally eat lots of meat, your body may need time to adjust. You may want to consider expanding your test to last for a couple of months. This will give you a better idea of what it is like to be vegetarian.

Here's something that will help: Soya Burger
recipe: 1 14oz can of pumpkin place in bowl
add 1/4-1/2 cup light soya sauce,then oat meal and wheat germ mix all till forms lumps make balls and flatten as you'd flatten a regular meat ball. cook in frying pan with a little cooking oil
Place in your favorite type buns. Serve or Eat!

It's pretty easy actually. There are many things you probably eat that are already vegetarian.
Pasta with a chunky sauce
Veggie stir fry over rice
Chili, Tacos etc. using soy crumbles
Vegetable casserole
Vegetarian paella
