How to prepare vegetarian manchurian?

'Gobi Manchurian' is vegetarian Manchurian.
Here is a recipe for cauliflowe manchurian and one for vegetable manchurian.
Cauliflower Manchurian
1 medium. cauliflower clean and broken into big florettes.
1 small bunch spring onoin finely chopped
2 tsp. ginger finely chopped
1 tsp. garlic finely chopped
1/4 cup plain flour
3 tbsp. corn starch
1/4 tsp. red chilli powder
2 red chillies, dry
3 tbsp. oil
1 1/2 cups water
1 tbsp. milk
METHOD:
Boil the florettes for 3-4 minutes in plenty of water, to which a tbsp. of milk has been added.
Drain and pat dry on a clean cloth.
Make thin batter out of flour and 2 tbsp.cornflour, adding 1/4 tsp. each of ginger and garlic and red chilli powder and salt to taste.
Dip the florettes in the batter one by one and deep fry in hot oil. Keep aside.
In the remaining oil, add remaining ginger, garlic and crushed red chilli and fry for a minute.
Add the salt and spring onions.
Stir fry for a minute. Add 1 1/2 cups water and bring to a boil.
Add 1 tbsp. corn starch to 1/4 cup water and dissolve well.
Gradually add to the gravy and stir continuously till it resumes boiling.
Boil till the gravy becomes transparent. Add florettes and soya sauce.
Boil for two more minutes and remove.
Serve hot with noodles or rice.
VEGETABLE MANCHURIAN
For Manchurian Balls:
1 1/2 cups grated Cabbage
2 big Carrots- grated
2 finely chopped Green Chillies
3 tbsp Cornflour
1 tbsp All purpose flour
1/4 tsp Salt
1/2 tsp Pepper powder
Oil for frying
For Manchurian Sauce:
1 1/2 tbsp Oil (take if you have sesame oil, ginger oil, garlic oil (otherwise reg. is ok)
1" piece Ginger - crushed
5-6 flakes Garlic - curshed
2 Green Chillies, chopped
1/2 Onion finely chopped
1 tbsp Soy Sauce
1 1/2 tbsp Tomato ketchup
2 tsp Vinegar
1/2 tsp Salt
1/4 tsp Pepper
1 1/2 tbsp Corn starch
Method:
Add 1 tsp salt to cabbage. Keep aside for 15 minutes, Squeeze well to remove out all the water.
Mix all the other ingredients of the balls. More flour may be added if mixture does not bind together.
Make balls. Flatten each ball.
Roll in flour and shallow fry 2-3 pieces at a time on medium flame. Keep the balls aside.
To prepare sauce, heat 1 1/2 tbsp oil, Add ginger & garlic. Fry on low flame for 1 minute.
Add green chillies and onions. Cook for one minute. Reduce heat and add soy sauce, tomoto sauce, vinegar, salt and pepper. Cook for 2-3 minutes.
Add 1 1/2 cups of water. Boil. Keep on slow fire for 2 minutes.
Dissolve cornflour in 1/2 cup water. Add corn flour strring continuously, cook till slightly thick.
Add the balls to the manchurian sauce and keep on slow fire for one minute.
Serve hot with Rice.

-2 cups cabbage,grated
-1/2 cup carrot,grated
-2 tbsp onion,grated
-4-5 green chillies,chopped
-2 tbsp cornflour
-1 tbsp garlic,chopped
-1 tbsp coriander leaves,chopped
-1 1/2 tsp pepper powder
-1/4 tsp ajinomoto
-1/2 tsp sugar
-Salt to taste
-Oil for frying
Method:-
1) Squeeze excess water from grated cabbage.
2) Mix cabbage,grated carrot,cornflour and little salt,rub throughly to form dough.
3) Shape into small balls and deep fry in medium hot oil till light brown.
4) Heat 2 tbsp oil in a wok,add garlic,spring onions,green chillies,saute.
5) Add water or vegetable stock,then add little salt,pepper,ajinomoto,sugar and soy sauce.
6) Bring it to boil and thicken with cornflour dissolved in cold water.
7) Add fried balls and serve garnished with coriander leaves.

2 cups Grated Cabbage
2 cups Grated Carrots

2 Chopped Green Chilies
3-4 Crushed Garlic Flakes
2 tbsp Corn Starch or Flour
Oil for deep frying
1 tbsp Soya Sauce
Salt to taste
1 tsp Pepper Powder
1 tsp Sugar
A pinch of ajinomoto
2 tbsp oil
Preparation of vegetarian manchurian :
* Mix grated cabbage and carrots and squeeze the water out from them.
* Now in a bowl take the squeezed cabbage and carrots and mix 1 tbsp. corn starch and add few chopped chilies and little salt to it.
* Make small balls (like koftas) of the mixture .
* Heat the oil in a kadhai / wok and deep fry the balls till golden brown, drain and keep aside.
* Now in a separate pan heat 2 tbsp oil.
* Sauté garlic, green chilies and spring onions.
* Add water, salt, pepper powder, ajinomoto, sugar and soya sauce. Bring it to a boil.
* Mix 1 tbsp corn four with half of a cup of cold water and stir into it. Gently add the fried balls to the gravy.
* Cook the vegetable manchurian for 3-4 minutes and serve hot garnished with chopped coriander.
