How can I make vegetarian lemon jell-o?!


Question:

How can I make vegetarian lemon jell-o?

I know to use agar-agar as the jelling agent, and have seen recipes involving fruit juice, but lemon? I don't want "lemonade" flavor, I want classic lemon flavor (artificial lemon flavor, I guess). I'm not strict vegan or anything, I'm just not down with the "boiled cow skin & cartilage jell-o thing".
I actually want to use the lemon jello in a recipe. I'm hoping that if I can come up with a good, plain lemon jello, than I can substitute the whole "solution" into the recipe.

Good question!

BTW, all jello that is made with gelatin is definitely not vegetarian!
That's why I can't eat Starburst or Skittles in America. In Europe they don't allow gelatin in candy....alas.

When I make jello I use Natural Desserts brand. It's vegan!
Unfortunately the only flavors they have at my health food store are strawberry, cherry, and orange.

umm...last time I checked there was no meat in jell-o. some gelatins do use animal products but I would think something so mainstream as jell-o would not.

You could always just get an inexpensive in-a-box lemon jello package from your grocery store!! :) Just add water! :)
