What's a GREAT vegan dessert recipe?

My girlfriend is Vegan...I love to make her desserts. Can anyone tell me a delicious dessert recipe? I want to blow her out of this world! Help me!

Vanilla Custard Topped with Berries (Gluten Free)

1 block silken tofu
1 whole vanilla bean
1 cup brown rice syrup
? cup maple syrup
2 cups of your favorite organic berries
3 tbsp olive oil

In a mixing bowl mix tofu with a mixer until smooth. Pour mixture into a sauce pan and heat, add ? cup brown rice syrup, ? cup maple syrup and stir until syrups are fully incorporated. Stir in vanilla and continue to cook for about 2 more minutes. Refrigerate for 2-4 hours before serving. When ready to serve, heat olive oil and remaining ? cup brown rice syrup and ? cup maple syrup in a saucepan. Add berries and cook to until sauce begins to become syrupy. Remove custard from refrigerator and top with berries.

Bananas and “Cream” (Gluten Free)

2 tbsp olive oil
? cup chopped cashews
3 tbsp maple syrup
3 bananas
1 teaspoon ginger
1 teaspoon ground cinnamon
1 cup vegan cream cheese (Tofutti brand; can get at Albertsons or Whole Foods Market)
1 teaspoon vanilla extract
1/4 cup maple syrup

Put olive oil and chopped olives in a pan and sauté. Add maple syrup until mixture begins to caramelize. Add sliced bananas and sprinkle with ginger and cinnamon. Sauté mixture for about 4-5 minutes and plate. In a small bowl mix cream cheese, 1 teaspoon vanilla extract and maple syrup together, pour mixture over top of bananas and serve.

This vegan and low-fat cake recipe uses applesauce instead of eggs or oil, making it nearly fat-free and guilt-free! Though its a little bit heavier than other cakes, the generous amount of cocoa makes this vegan cake absolutely heavenly.

Vegan Low-Fat Chocolate Applesauce Cake

INGREDIENTS:

* 2 cups flour
* 1 cup sugar
* 1 tbsp cornstarch
* 2 tsp baking soda
* 1/4 tsp salt
* 1/3 cup cocoa
* 1 1/2 cups applesauce

PREPARATION:
Pre-heat oven to 325 degrees. Grease and flour a bundt cake pan. Note: You can use other cake pans, but because this cake is a bit heavy, layered cake pans are not recommended.

Mix all of the dry ingredients together in a large bowl.
Add applesauce and mix well until batter is smooth.

Bake for 50-55 minutes, until done. You can always tell that a cake is finished baking by sticking a toothpick in the center of the cake. If the toothpick comes out clean, that is, not covered in batter, then your cakes is done baking.

Frost, if desired, and enjoy!

Aww... that is so sweet. Here is an idea, you could get Port Finest Reserve Casal dos Jordoes, which is an organic/vegan Port that sells for about $30.00. I would suggest pairing it with a vegan Stilton or other blue vein cheese or with a vegan dark chocolate or carob. If you live in NYC take her to Candle 79 (Lex and 79th). The food is spectacular and the desserts too, I am not remotely close to a vegetarian and love to eat here!

Avocada fudge recipe

Ingredients

1 avocado, ripened
1/2 cup margarine
1 tsp vanilla
1 cup cocoa
3 cups powdered sugar
1/3 cup chopped walnuts (optional)

PREPARATION:

In a medium sized saucepan, melt the margarine over low heat.
Once margarine is melted, puree with avocado in food processor or blender until perfectly smooth. Be sure there are no chunks of avocado left!

Return mixture to saucepan over very low heat and aff the rest of the ingredients,except the walnuts, adding the powdered sugar a portion at a time.

Once all the sugar has been added, the mixture should be thick. Add walnuts if desired, and transfer to a loaf pan. Refridgerate until firm. Now, be patient! If you don't let it firm up, you won't be able to slice it up into squares.

The Vegan chocolate chip cookies in Vegan With a Vengeance are wonderful. I don't have the book with me, but just go to your local B&N or Borders and copy it out.
