I'm stumped. What can I cook?!


Question:

I'm stumped. What can I cook?

I was going to make a Shepherdess Pie but it's too cold, wet and dark to go out and dig up potatoes, parsnips or carrots. Any ideas for what I could make instead that could sit in the oven for a while (so not a stir-fry) whilst I do something else. I've got some other veg like cabbage, courgettes, peppers, toms plus various pulses, quinoa, rice etc. plus one egg. Any vegetarian suggestions gratefully received.

make a spicy veg creole
stew the tomatoes throw in some celery, peppers, onions, cayenne pepper spices and bay leaves then let simmer on stove for a few hours
serve over rice... delicious

Where do you live that you would need to go and dig up potatoes? That's so neat!

How about a soup? You can mix all the ingrediants together and make a veggie tom. soup?

Or maybe stuffed cabbage? Stuff the cabbage with your other veggies and then boil it. You can cover the stuffed cabbage in tomato sauce.

Perhaps you could make some kind of vegetarian casserole - use some tinned tomatoes to make a sauce, and throw everything else in !

i had shepherds pie last night why not make a pan of hot veggie soup chunky veg and add a little chilli it gives it a lovely kick oh yes and some garlic and have some nice wholemeal bread enjoy

You could prepare the grain you like best, then quick sautee the pepper with an onion and some simple spices, then toss in the grain and beat the egg well and quick stir it into the grain and veggie mix...kind of like fried rice.

They cut in half the zucchini and put them in a casserole pan, top with the fried rice mix add some sliced tomatoes and slow bake it for 90 minutes.

I love your comment about the 1/2 an egg....how funny.

what about a veggie risotto ?

how about making a chilli, using all veg and the pulses to bulk it out,
chop up the courgettes, peppers and toms get some spices in there and then simmer away

or would try to do some sort of lasagne with courgette, pepper and toms in a sauce, and cabbage as the 'pasta' leaves
simple cheese sauce added to the flavours

could also have curry wth braised rice

On a day like yours, it sounds like Borscht (Russian Cuisene) would be tasty. Just a few simple ingrediants make this soup easy and very yummy!

2 cups chopped beets (I use canned beets if I don't have fresh available)
2 cups chopped carrots
2 cups chopped onion
4 cups beef broth (canned or make your own with buillion)
1-2 cups tomotoes or 16 oz. diced tomotoes undrained
2 cups chopped cabbage
1/2 teaspoon salt
1/2 teaspoon dill weed
1/2 teaspoon pepper

In three quart saucepan combine beets, carrots, onion and broth and bring to a boil. Reduce heat, cover and simmer for about 30 minutes. Add tomatoes and cabbage. Cover and simmer for 30 minutes or until cabbage is tender. Stir in salt, pepper and dill weed and ENJOY!

PS. I typically add butter about 3 tablespoons before simmering the second time. This adds a touch of creamy and is quite delicious! Good Luck

Chuck the egg!

Wash all veges first,

Tear the cabbage into medium size strips.
Slice the courgettes and peppers, lengthwise, in half.
Cut the tomatoes in half and add any other veg you may have (a whole bulb of garlic, or an onion would be good),
then place in a baking pan, dish or whatever you have for roasting.
Sprinkle olive oil over all the veges, season with a little salt and black pepper and place in the oven.
Garnish with some dried mixed or Italian herbs before serving with steamed quinoa.

vegetarian lasagne or

pulses soup with ‘vegetarian biryani’ rice.
