Good, easy veggie dinner recipes for a non-vegetarian?

I love veggies, but HATE tofu. I would like some fast, very easy dinner entree recipes using ingredients I can get at any grocery store. Is this possible? If there just isn't anything out there like that, can you mark the specialty ingredients with an asterik? And can anybody recommend a cookbook or even a website I might like based on these specifications?


Answers:
Veggie lasagna is good. Make a alfredo sauce...or you can use the bottled stuff, steam some broccoli, small diced carrots, zucchini (Green and yellow). You don't have to cook the pasta first. Put a layer of sauce in the bottom of a greased pan and sprinkle with fresh parmesan cheese and mozzarella, place pasta on top and layer until just about to the top of the baking dish. Cover with foil and bake for 1 hour at 350. Take off foil and place more cheese and bake for another 20 minutes.

Stir Fry is very simple - green peppers, scallions, bamboo shoots, baby corn, broccoli, onion, yellow and red peppers, pieces of ginger. Add garlic liberally and stir fry in sauces. I actually added tofu and had 3 tofu haters eating it - they ate it, never knowing that they ate it! And all this from people who prior to said, "Just don't put in tofu because we can't stand tofu!"

Make some rice to go with it and voila! You have a yummy dinner.

To make egg rolls to go along, get the wraps - usually found in the produce aisle near the tofu.
In a pan, shrink a package of shredded cabbage, some bean sprouts, diced ginger, scallions. Spoon onto wraps, holding the wrap so that it looks like a diamond. Roll the bottom corner up and over the food, tucking it in slightly, then fold the left and right corners and brush a little egg onto the last, top corner. Then fold that down and seal it. Brown in a pan of canola oil that has been heated up. Serve with duck sauce for dipping.

fry the veges in a wok with vegetable oil
boil rice till its ready pour some salt over veges and soy sauce alittle and put rice in bowl add veges and more soy sauce for taste

I made a stew the other night that was really good and easy. I did mine in a crock pot and it was even better the next day.

You will need:
6-7 new potatoes, quartered
1 small bag baby carrots
1 medium onion, cut into chunks
1 can diced tomatoes with juice
2 tablespoons chopped garlic
A few dashed Italian seasoning
1 can Vegetable broth
salt to taste
**Quorn tenders, optional

Toss everything but the quorn in crock pot and cook on high for 4 hours or on low all day. When stew is done, toss in the quorn tenders and let heat through.
