Recommendation for a vegetarian sweet Italian sausage?
We are planning a soup night in Decemeber and want to make the Italian Sausage and Tortellini Soup recipe I have. However, several of our friends are vegetarian. What brand of vegetarian Sweet Italian sauage would you recommend? Adjusting the rest of the recipe is easy...cheese tortellini, vegetable stock, etc. I'm wondering if I can get away w/ making one version...and our nonvege friends won't even notice....as long as the sausage is 'up-to-par'? Tx-in-advance!

the tofurky ones are good, but they're really soft.
the boca burger ones are better (not vegan, but vegeterian)
because they're a little harder, and easier to cook with, the tofurky ones wouldn't be good with soup they'd obsorb EVERYTHING like sponges.

The Tofurky Italian sausage is really good
I'm kind of surprised that no vegheads have mentioned the ones made by Yves! But since I've fooled carnivores with 'em I think that might be the reason (too close to the 'real' thing)
I've been a vegetarian for too many years to be able to judge what fake meat is close to the real thing, but my meat loving stepdad at one of my Morningstar Farms italian sausages and said it was decent. Morningstar Farms is also usually available in the regular grocery, which is a major plus for me.

Off topic but you might want to check the cheese filling in the tortellini. It may not be vegetarian friendly (the enzymes used are probably animal rennet).
Regarding the soysage, my omni husband really like Boca Italian sausage.
