Vegetarian Chow Mein

3/4 pound bean sprouts

Directions:

If you are using fresh noodles, blanch them first in a large = pot of boiling water for 3
to 5 minutes. If you are using the dried = noodles, cook in boiling water for 4 to 5
minutes. Drain the noodles, = then put them into cold water until required.

String the celery and slice diagonally. Shred the bamboo = shoots.

Heat a wok or large frying-pan and add the oil. When moderately = hot, add the garlic and
stir-fry for 10 seconds. Add the onion, = mushrooms, celery, and bamboo shoots and stir-fry
for about 5 minutes.

Drain the noodles thoroughly and put into the wok. Continue to = stir-fry for 1 minute then
add the rest of the ingredients except the = bean sprouts. Continue to stir-fry for another
2 minutes and then add = the bean sprouts. Give the mixture a good stir and turn it onto a
= serving platter.

Garnish with fresh coriander sprigs.

sherry 1 teaspoon sugar
3/4 pound bean sprouts

Chow Mein to me means stir fry. You just need to pick out the vegetables you want in the amount you want.
Suggestions for vegetables (cut into bite size pieces):
bean sprouts (usually mung bean)
bamboo shoots
water chestnuts
mushrooms
bok choy, napa cabbage, or celery
carrots
bell peppers
broccoli florets (just the green flower tops) or broccoli raab
daikon radish, julienne cut (very spicy)
edame (soy beans shelled, usually bought in the frozen section)

Heat the pan till it is warm, then add the oil. Put some minced ginger and garlic in the oil and sautee till they are browned (Asian flavors for the oil to coat the vegetables). Then add the hardest to cook vegetables first: carrots, broccoli, daikon, and cook by mixing them in the oil and then putting a top on to steam them a little bit. Then after 3-5 minutes add the rest of the vegetables: bell pepper, chestnuts, shoots, mushrooms, and again mix up to coat the vegetables. Add the bean sprout last just so you wilt them in the vegetables.
To get a sauce with the vegetables, all you need to do is add some vegetable broth (the amount you would like for sauce) and heat up the pan real high to get the broth to boil quickly and then add a thickener: cornstartch dissolved in water, arrowroot dissolved in water, or kudzu root dissolved in water (1-2 Tablesppons is usually enough of any thickener in 1/4 cup of water). Add the thickener slowly as you mix it in. Stop when it is thick enough as a sauce you want. When you are done and have turned off the stove, add tamari or shoyu (soy sauces) to taste (don't cook the soy sauce as you will kill all the good nutrients in the fermented soy).
