As red lentils cook quickly I like to soak them in boiling water for 30 minutes drain, then add the rest of the ingredients, for a more savory flavour saute some onions,your spinach and spices it up to you there, I use cumin, cayenne and a touch of curry powder.
I then combine the ingredients with some breadcrumbs or falafel mix, I get at the bulk store, a touch of oil, salt and pepper, form them into patties and let them rest in the frig until I am ready for them, I recommend at least 2 hours so they firm up.
Then I cook them in a non-stick pan with only a hint of oil, and serve them as a main dish or burger style with tomato and either a tahini based dressing or a dollop of hummus
