What Do You Look For When Buying Cauliflower?

When buying fresh cauliflower, what physical characteristics should I be looking for to insure that I good a good head? Also, what should I stay away from? Thanks!


Answers:
good bright color, and firm feeling. and strong stems

Stay away from cauliflower if it smells odd,or is brown or greenish. Then its too ripe or not enough ripe. You could pinch it or thump it too that might do somthing. It should not feel to flimsy or smell like stink.

Make sure that there is no mold spores on the florets. I've seen some places where it has mold on it. Moisture gets under the plastic that they ship it in. If you have a Whole Foods Market or a fresh market it's best to buy it there.

Make sure its a white or cream color. And look out for spots or odd colors and smell it just to make sure its fresh.

good bright color, no flowering heads, nothing brown, tight heads and heavy for its size
