Vegan Egg Nog
Makes 4 servings
Cook Time - 10 mins. plus one hour set time

Ingredients
20 oz silken tofu
1/4 teaspoon tumeric
1 Tbsp vanilla extract
1/4 cup sugar
16 oz vanilla soymilk or rice milk
2 Tbsp. brown sugar
nutmeg

In a blender or food processor, combine all ingredients except nutmeg
blend thoroughly. Serve well chilled and dusted with nutmeg.

Squash casserole and if I can manage to find one Tofurkey with plum sauce

im very fond of tofu.
what i do, i usally just eat out. i live in chicago wheres there hundreds of veggertian places to eat. its nice to hear of a nother person. any way, heres a good recipe, very easy. Get firm tofu, cut in strips & cut in slices. cook lightley in pan in oil, make ramen soup. any flavor, dont use the seasoing packet. drain good, get any brand of sweet N sour sauce, add that to drained noodles, add fried tofu to it, i also add fried green pepper sometimes to. its real good. also fry tofu & dip in any kind of sauce, i love sweet baby rays Barbe Q sauce, Yummy.

you can start with a salad and rolls
veggie dish, I like three been salad or green been casserole
veggi lasagna

* 2-3 c Italian tomato sauce, warm
* 1 pound dry lasagna noodles
* 2 pounds firm tofu, drained
* 2 T garlic, minced
* ? c basil, chopped
* ? c onions, chopped
* 1 T fresh oregano, chopped OR 1? t dried
* ? t salt
* black pepper
* 2 pounds fresh spinach, de-stemmed and washed
* cheese
* green bean or squash

Directions If the lasagna noodles need to be cooked before use, do this first, following the instructions on packet, and then set them aside to cool slightly. It's a good idea to cook with a T of oil, to prevent them sticking together.


Place tofu in a bowl and mash with a potato masher or your fingers. Combine with garlic, basil, parsley, oregano, salt, and pepper.

Preheat oven to 400.

Ladle a bit of the warm sauce into the baking dish and spread it around so that the bottom of the dish is lightly coated.

Place lasagna noodles in the pan to form a single layer. If necessary, break noodles to fill gaps.

Sprinkle 1/3 of the tofu mixture on the noodles, then lay out 1/3 of the spinach on top of that. Cover with tomato sauce.
add any other veggies and sauce


Repeat twice, using 1/3 of ingredients for each layer, saving a sprinkle of tofu to garnish the top.
after 25 minutes add extra cheese to top and cook for 5 minutes

Cover with foil and bake for 30 minutes, until sauce is bubbly. Let cool slightly and serve.

desert is apple pie, or fruit salad or cranberry nut bread

I just made a Thanksgiving tofurky, and will likely make another. I'm thinking of adapting some sweet type recipes to vegan using NRG egg replacer. I may make some desserts with agar-agar which is derived from seaweed, a gelatine replacement.

So far I don't have a lot of recipes collected for the holidays as this is my first vegan holiday season. But I imagine many recipes should be simple to adapt.

Since I have so few so far, I wasn't going to reply but then saw that there were a lot of people replying with meat "jokes"...there are trolls everywhere.

I tend to do a google search on vegan recipes and go from there.

Historically my Xmas cooking has been the same as Thanksgiving except that for Xmas I have a list of folks with restricted diets and for them I convert 'off-limit' recipes and give them 'safe' goodies. Things like vegan 'milk' chocolate, no sugar candies to diabetics, egg/dairy/gluten free cakes or cookies as appropriate. Wheat-nuts instead of real nuts etc.

I've already listed my personal favorites several times in all the previous months requests.

And don't be shy! Feel free to use "report abuse" to nail the carnivores for "harassment"! Just be sure to add some text to the box or the 'bots' won't send your reports to a human.
