Baked Corn
An old-fashioned baked corn recipe. Everyone asks for the recipe.
INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.
Zucchini and Potato Bake
This is a very easy and delicious dish that I like to make as a side dish for my summer barbecues.
INGREDIENTS:
2 medium zucchini, quartered and cut into large pieces
4 medium potatoes, peeled and cut into large chunks
1 medium red bell pepper, seeded and chopped
1 clove garlic, sliced
1/2 cup dry bread crumbs
1/4 cup olive oil
paprika to taste
salt to taste
ground black pepper to taste
DIRECTIONS:
Preheat oven to 400 degrees F (200 degrees C).
In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs, and olive oil. Season with paprika, salt, and pepper.
Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.

My specialty- nothing fancy but really yummy- Quorn mince fried with fajita seasoning on a jacket potato, topped with cheese and sour cream!
Also I love a good salad, with avocado, mozzarella, tomato, mushrooms, Quorn strips, chives, and whatever else!
Roast beetroot with horseradish
1kg of fresh uncooked beetroot, peeled, cut into wedges
400g shallots halved if large
3 tbsp olive oil
3 tbsp balsamic vinegar
3tsp caraway seeds, little bit more for sprinkling over the finished thing
fresh chives to sprinkle over the top
150ml smetana (or soured cream)
25g fresh horseradish, grated or 2tbsp jarred
Goes well with some rice.
Preheat oven to 200C, gas 6. Put the beetroot in a big roasting tin with the shallots. Drizzle the olive oil & balsamic vinegar over. Season. Toss it well to coat everything nicely. Roast it for 25 minutes.
After that put the caraway seeds in the tin and mix with the beetroot and shallots. Roast for another 20 minutes. The beetroot should be tender and the shallots should be soft and golden.
Mix the smetana (soured cream) and horseradish. Season.
Serve up!

I'm including one (that I have given before) from an organic farm not far from me called Riverford Farm. It has loads of recipies and food ideas. With all of these sites saved to your 'favourites' you should never be short of some ideas for those days when your imagination is more jaded than your palate - or the Queen is 'round for tea and you need to impress!
I like to cook Beef In Ale Pie with the meat juices in the beef gravy. It's a lovely vegetarian dish for the commited Veggie.

You spelled exciting "exiting" and then you spelled recipes "recipies"? Can you not see what a vegetarian diet is doing to you already?
I strongly encourage you to start eating a well balanced diet which includes dairy and meat. Otherwise, you will continue to suffer irreversible brain damage. There is a big article about this in a medical journal I was reading.
