I am planning on a vegan fry up!

Scrambled tofu is quite easy and delicious. I don't have exact measurements but here is how I do it.

1 extra firm block tofu (firm is best for this recipe)
1 big bell pepper
2 small tomatoes
2 small zucchini
1 medium onion
Soya sauce
nutritional yeast
turmeric

Chop the veggies as samll as possible, put bell pepper in a different bowl , crumble the tofu with your fingers and put it aside. Chop the onions very small.

Use a Wok or large frying pan. Heat about 3 TBS oil medium heat. I like canola.When the oil is heated, add your onions. Saute them until they are brown, then add the bell pepper and let it saute for about 4 minutes. Then add the zucchini and tomatoes. Now you can add your tofu and stir time to time. Use a tiny bit of turmeric to give your tofu some yellowish color. Not too much because it is bitter. Stir the whole thing time to time and let it cook for about 15 minutes. At the end add some Soya sauce and 2 handfuls nutritional yeast and stir again for 1 minute or so. You don't need salt because Soya sauce is already salty. Add salt to taste after if needed.

FunkUCLA's scrambled tofu receipe:

Ingredients:
one pack of store bought tofu
2 garlic cloves sliced in thin slices.
half cup sliced onions
1/4 cup chopped green onions (green parts only)
one teaspoon of onion powder
one teaspoon of garlic powder
1 tablespoon lawry's chicken seasoning. (the seasoning is completely vegan)
pepper to taste
DO NOT ADD SALT!!! (the seasoning has plenty of it)

Mix the seasoning, onion powder and garlic powder and pepper together in a small bowl and set aside.
Next remove tofu from package and drain it.
Place tofu in a microwaveable bowl and microwave for 2 minutes. (this will remove excess water from the tofu).
Let the tofu cool down and when it is cool enough to touch squeeze any excess liquid out.
In a large bowl, break the tofu into pieces and add the seasoning mixture to it.
With a wooden spoon mix in the seasonings till well distributed and till tofu is well broken down.
In a pan put some olive oil (enough for sauteeing)
saute the onions and garlic and green onions together.
When the onions wither, through in the tofu mixture and mix it well with the onions and garlic. do not over mix or it will be too broken down. leave it untouched for one minute and mix one more time. leave it alone for another minute and you done. Bon Apetite!!!!

My friends always come to breakfast at my house because of this receipe!! Its delicious!!!

*oink* it is out there!!!! I love tofu, and soy milk, *oink* can i come over for some good food, don't worry, i won't eat it all, *oink* i'm not THAT much of a pig!

This is exactly what I made for breakfast today...my family loves it. The recipes that have been posted here are pretty much what I do with my version of Tofu scramble.

Add some mock meats like veggie sausage, hot dogs, bacon.
Turmeric is a must, not only does it give it a spectacular color but it also makes it taste kinda cheesy.

Sprinkle some vegan parmesan cheese on it and serve with hash browns...
