Yum.

For a while, I got stuck on mushrooms and green peppers sautéed in very garlicky garlic butter, thrown on a toasted bun with mozzarella melted on top. A bit bland, but no mind.

I have no idea which of these is the best answer, so I'm putting it to a vote... Thanks!

It would be roasted red peppers, grilled mushrooms, avocado, sprouts, cheese, and dijon mustard on toasted rye.

WHAT...NO MEAT? THEN IT'S NOT MUCH OF A SANDWICH THEN!

Veggie calzone. You can fill it with nearly everything and vary the type of cheese you use, season the crust differently, so it can be prepared to anyone's taste.

eggplant parmegiana. i've tried to make this at home but end up going to a local italian restaurante

I really do like meat in my sandwiches, but if I was going to eat a meatless one, it would be a grilled cheese!

I like eggplant parm, also.

I liked my cucumber sandwich toasted with butter and salt.

Grilled cheese with 2 slices of American cheese, but the outside of the white bread has to be sprayed with garlic spray. Brown on both sides, cut into diagonal fourths, and dip the triangles in wasabi mayo.

Roasted eggplant with a Greek salad mixture on toasted herb bread makes an incredible hot veggie sandwich.

I also love grilled cheese, jazzed up with tomato slices and carmelized onions.

I LOVE falafel (made from a box mix) on pita with yogurt sauce (yogurt, garlic, chopped cucumber, salt, pepper, lemon juice) topped with romaine lettuce, cucumber and onion. The hot falafel and pita contrasts nicely with the cool yogurt and veggies.

Grill cheese and pickles. =)

I'm not a vegetarian but I loooooooooove tofu and this is how I make tofu sandwich meat: buy a block of extra firm tofu and freeze it for at least 24 hours, then thaw it in the fridge. Cut it into 1/4 inch thick slices like the width of the tofu, so that you have big, flat slices. Marinate them in a balsamic vinaigrette for a few hours. Spray a pan with nonfat cooking spray and cook each slice for about 7 minutes on each side then slap a slice on two pieces of toasted sourdough bread, put some provolone, lettuce, tomato, onion, pickles, and mustard and there ya go!

I take a fresh roll/bun (whatever looks good at the bakery) and load it up with roasted red pepper, roasted zucchini and swiss cheese. Then I spread pesto inside the bun, put the sandwich together and heat it up in either a panini press or just in a hot skillet (with lots of pressure).

Chargrilled eggplant, sliced olives, spinach leaves, sundried tomatoes, swiss cheese, sliced button mushrooms and basil pesto all put together on a toasted foccacia....

Sweet potatoe, baby spinach leaves, low fat fetta and sundried tomatoes with cracked pepper on turkish bread.

tomatoes sliced very thin, chopped red onion, dill flakes, mustard, mayo, sharp cheddar cheese, garlic powder, seven grain or flaxseed bread.


toast the bread, then butter it and sprinkle on some garlic powder. layer in this order on one piece of the bread: tomato,onion, cheese. microwave just a few seconds til the cheese starts to soften. sprinkle the dill over the cheese. on the other piece of bread spread a thin layer of mayo and mustard. combine it and enjoy! i like dipping it in just a little bit of ketchup. you could use ranch or creamy caesar dressing in place of the mayo/mustard

MM... there are some great chickpea patties which I love in a sandwhich with barbeque sauce (with no animal products) some lettuce & sometimes baby spinach.
The patties are heated up in the microwave, though you could fry them if you want.

But if you're looking for something less processed a variety of beans in a sandwhich (or in lebanese bread) is great. My favorite mix is:

2 cans or equivallent red kidney beans
1 can or equivallent refried beans
1 can or equivalent of three bean mix (or whatever is abouut the house)
A few pinches (to taste) of chilli powder
Some sliced jallepenos if you like spicy things

Add to pot. heat through, stirring semi-frequently.

This lasts AGES on sandwhiches or in tacos, nachos, everything. Well, it doesn't last too long, because iit's so tasty, but it has the potential to.

Good with cheese, lettuce, your general salad or just by itself

I guess you got that fake bacon in your area....in australia its called "not bacon" by sanitarium company, even has fake fat but all soy. As a substitute the firm tofu thing works.....marinate it to taste, sauce mustard, spice whatever, grill in an oiled pan or teflon griller....great meat substitute

Grilled Sub (lacto-) -

Sesame sub bread filled with your favs: tomato, swiss cheese, dill spread, cucumber, etc...wrap in tin foil and throw it on the grill for about 5 minutes - yum!
