I don't want to disappoint you and I know somebody is going to flame me for this...
I just spent 2 hours digging through the web, looking through my own resources and getting my cardiac nutritionist *really ticked* by calling her at 10pm to ask her about this.
It would appear that your mom is right
My CN suggested the link listed below, the important part is the research links at the bottom- not the study itself (unless you want to take part).
I REALLY hope someone can prove me wrong!

Staying away from animal products is actually good for ladies with cystic fibrosis, I can't see the difficulty here. A plant-based diet with ample servings of fruit and nuts is good for the health of your female organs...I thought everyone knew that.
talk to your doctor and if you doctor agrees with you have him or her talk to you mom
Ino sum1 w/ cystic fibro. Shez 19 & actully in the hopspital rite now Wen I visit I'll ask Her if She no's ne one & I'll edit My Post here. Sorry I couldn't help now
Ok So I talk'd 2 Her 2day She's *Almost* a vegetarin, or a weekend vegg. Ne hoo She Sez if U triple Ur Caloric intake then it'll b very possible but U must b strick, dr.s & Such will tell U not to but If You are ever vigilant it is possible.( also A wicked load of supplements, I don't take them Myself, but I'm also not a healthy eater/ not keeping vegan4 health 2 begin w/... Let Us know what U decide "The Yahoo Community"
Being a vegan is insane with your cystic fibrosis. It's pretty silly without it as it is not a nutritionally incomplete diet. You would require a lot of supplements to do this and at your age I doubt you could manage it. You can eat eggs and dairy without harming animals.
Please read some real nutrition sites instead of propaanda like PETA that love to scare senstive children like you. And speak to your doctor about this instead of whining about your loving parents who are trying to do the best for you.
I love animals too, but I'm not going to be foolish about pretending that humans are designed to be omnivores.
There are many aliments/diseases healed or at least improved by going Vegan. I think your Mum just isn't aware of that. Also it it takes a real commitment to eat a good balanced diet. Not just to quit eating meat.
Here's an amazing group that has great success on healing through food.
