What is your favorite vegan recipe?

I concocted a Tuscan Tofu Recipe that's quite good. here's what you need.
1 lb firm tofu
1C marinara sauce of your choice
1/4 Lb green beans(fresh)
2 Tbs fresh minced garlic
1 Tbs capers
dash oregano
dash basil
artichoke is optional
1- saute tofu until golden brown in a 1 Tbs or so of extra virgin olive oil
2- add in all items except marinara, saute for 2 min
3- deglaze w/ a red wine, add in marinara
4- let simmer for 2 min

VEGETARIAN HOT & SOUR SOUP
(4 servings)
4 chinese dried mushrooms (open cut mushrooms)
115g or 4 oz firm tofu
50 g or1 3/4 oz canned bamboo shoots, drained
600 ml or 1 pint vegetable stock or water
50 g or 1 3/4 oz peas
1 tbsp dark soy sauce
2 tbsp white wine vinegar
2 tbsp cornflour
salt and pepper
sesame oil-to serve
1.place the dried mushrooms in a bowl and cover with warm water. set aside to saok for 20-25 min
2.drain the mushrooms and squeeze out the exess water. reserving the soaking water. remove the stalk and tough centres and cut the mushroom caps into thin shreds. shred the tofu and bamboo shoots.
3. bring the stock or water to the boil in a large saucepan. add the mushrooms, tofu, babmoo shoots and peas. bring back to the boil. lower the heat and simmer for 2 min.
4. mix together the soy sauce., vinegar and cornflour with 2 tablespoons of the reserved mushroom soaking liquid to make a smooth paste. stir the into the soup, together with the remaining mushroom soaking liquid. bring to the boil and season with salt and plenty of pepper. simmer for 2 min
5. ladle the soup into individual warm bowls with a few drops of sesame oil in each and serve.
i made this with my girl scout troop when we were studing diffrent cultures. some of the ingredents were hard to find. but it was soooooooooooooooo good!!!!!
Other than the savoury vegetable or grain dishes...
I'd have to go the dessert route and say Wacky Cake...
A moist chocolate (cocoa powder) cake without milk, eggs or butter... (I believe it was created in the 1930's during the depression when supplies were limited.)
Sometimes I throw in coconut or walnuts for a bit of a variation.
Well. I have an enourmous sweet tooth, so my favorite is a carob pie...thing. (Heh. Sorry. I've forgotten the name of it).
It consists of a pie crust...duh
Carob chips
Tofu
Sugar
and
Soy milk
You take a bag of carob chips and melt them over the stove. Next you put a container of tofu and the melted carob in a blender, adding soy milk slowly to get it creamy.
Next you add sugar to your liking.
Lastly, pour it all into the pie crust and let it sit in the fridge for six to eight hours.
Its delish!! (Excuse me for not have exact measurments)
Bloody salad:
sweet pickled beets, red cabbage, red bell pepper, carrot, and red onion. put all these ingredients in a processor and chop til its the consistency of cole slaw. very tasty you can add more or less beet pickle juice depending on how sweet you like it.
cut mushrooms into same size chunks. White, portabella work, I also add crimini, oyster or shitake, and reconstitute them if they have been dried. Take some margerine and melt it, and add soy milk. Stir til saucey, adding a pinch or two of flour and add garlic and onion, finely chopped, as well as chives and your favorite dried herbs and a dash of tamari and black pepper. Toss sauce around mushrooms, coating thoroughly. Add to baking pan and cook til warm and tender. It makes it's own gravy and is great tossed on pasta.
Carrot and Corriander Soup
Ingredients
4 large carrots (peeled and chopped)
1 large onion
2 tsp ground coriander
vegetable stock
olive oil
salt
pepper
Fry the onion in oil until soft. Add the carrots and coriander and stir.
Cover in vegetable stock and bring to the boil. Simmer until the carrots are cooked (at least 20 minutes to make them soft enough to blend).
Blend until smooth. Season with salt and pepper.
