Vegetarian Black Bean Chili
Serves 6
Dried beans are an age-old pantry staple in winter, and nearly any variety will work well in this recipe; some good alternatives to black beans include navy beans, cannellini beans or red beans. If you like, garnish with sour cream and chopped fresh cilantro.
Ingredients:
2 1/4 cups dried black or kidney beans (or 4 cups canned beans)
3 Tbs. olive oil
3 yellow onions, chopped
2 fresh serrano or jalape?o chili peppers, seeded and minced
5 large garlic cloves, minced
2 Tbs. chili powder (add more if you find it is not spicy enough)
3 Tbs. ground cumin
1/4 tsp. cayenne pepper
2 cans (28 oz. each) crushed tomatoes
Salt and freshly ground pepper, to taste
1 cup coarsely grated Monterey jack cheese
Directions
Pick over the beans and discard any damaged beans and stones. Rinse the beans. Place in a bowl and add water to cover generously. Let stand for about 3 hours. Drain the beans and set aside.
In a large, heavy saucepan over low heat, warm the olive oil. Add the onions and chili peppers and sauté, stirring occasionally, until the onions are soft, about 10 minutes. Add the garlic, chili powder, cumin, cayenne and oregano and sauté, stirring, for 2 minutes more. Add the beans, tomatoes and water to cover by 3 inches. Bring to a boil over high heat. Reduce the heat to low and simmer, uncovered, until the beans are very tender and have begun to fall apart, 2 1/2 to 3 hours. Add water if the beans begin to dry out but are not yet cooked.
Ladle into warmed bowls, sprinkle with the cheese and serve immediately.

From Weight Watchers "make it in minutes".
4 servings 6 cups 30 min 15 min prep
1 tablespoon canola oil
2 cloves garlic, chopped
1 large onion, chopped
1 green bell pepper, seeded and chopped
1 jalapeno pepper, seeded and chopped
2 (15 1/2 ounce) cans red kidney beans, rinsed and drained
1 (28 ounce) can whole canned tomatoes, drained and chopped
1 (10 ounce) package frozen corn kernels, thawed
1 tablespoon chili powder
1 tablespoon cocoa powder
1 teaspoon dried oregano
1/2 teaspoon coarsley ground black pepper
1 ounce semisweet chocolate
Heat oil in large saucepan over medium-high heat.
Add garlic, onion, bell pepper, and jalapeno pepper; cook, stirring often, until the vegetables begin to soften, 4-5 minutes.
Add beans, tomatoes, corn, chili powder, cocoa powder, oregano, salt, and black pepper.
Bring to a boil and cook, stirring often to prevent scorching, until beginning to thicken slightly, about 15 minutes.
Remove from the heat and add the chocolate, stirring until melted.

I don't know about my own recipe, but I get this product called Amy's and they have chili. It's vegetarian and has vegan cheese...yum!
you can make chili con carne but just without meat. it's great! instead of the meat take more vegetables (paprica, aubergine, zucchini, mais, beans, soy).
you can eat this with tortilla wraps. it very tasty!

I make up my own recipes and I never write them down, so sorry if I confuse you. This is for about a weeks worth of chili. Also I don't make my chili chunky. And you'll need a huge pot.
3-4 cans Dark and light red kidney beans
can of black beans
About half a can of tomato paste (small can)
1-2 large cans of tomato sauce (it will thicken up)
Can of crushed tomatoes
Cut or blend 1 red bell pepper 1 green bell pepper, fresh tomatoes, onion, garlic, jalepenos or your favorite peppers. Remember that the seeds make it hotter.
(you can add a bag of Morningstar veggie crumbles, or cook them in a skillet first. Or go without if you don't like the meaty taste)
Season to taste
Tobasco sauce, Garlic powder, pepper, paprika, cayenne pepper, a bit of salt, salsa
Add cooked rice and a can of corn and heat on low
You can also add some veggies like celery, zuccini, carrots...be creative!
Serve with cornbread! mmm
