1 finely chopped onion
1/2 cup peanut butter
2 teaspoons curry powder
4 cups vegetable stock

Stir together in a casserole dish then back for 1 hour

Quick and Delicious DHAL

Ingredients:

* 1/2 lb. lentils (red), washed and soaked for few hours
* 2 cups water, add more as needed
* 1 large onion, grated
* 1 clove garlic, minced
* 1 potatoe chopped small
* 2 small tomatoes chopped small
* 4 T. butter or oil
* 1 T. ground coriander
* 1 tsp. ground turmeric
* 1 tsp. ground cumin
* 1/2 tsp. American chili powder (like used in Chili con Carne)
* 2 T. curry powder
* salt, to taste

Cook lentils, potatoes, tomatoes in water until soft (about 1/2hr). Seperately fry onion and garlic in butter or oil until soft & golden. Mix all the spices together in a small bowl (add a bit at a time....will take more than you expect). Add spice paste to onions & garlic and fry all together, until aromas are fully developed (don't burn). Add the final spice paste to lentils, salt to taste and simmer gently for a few minutes, until warmed through. You can add more water if necessary while it is simmering. Serve hot with some chopped fresh cilantro over white Basmati rice or with Naan.

Dhal

Ingredients

1 onion, diced
1-2 cloves garlic, minced
1 tsp ground turmeric
1.5 tsp ground cumin
1 tsp ginger root, finely grated
1/4 tsp ground cardamom
1 c. dried lentils or split peas (if using split peas soak overnight)
3 c. hot water
1 tsp salt


Instructions

Serves 4-6
"Fry" onion, garlic, turmeric, cumin, ginger root and cardamom in water or broth until golden brown. Add lentils, water and salt. Bring to a boil. Reduce heat, cover, and simmer until lentils are tender, about 45 minutes. Remove cover and simmer over very low heat, stirring frequently, about 20 more minutes, until lentils are mushy and thick, about the consistency of refried beans. Garnish with onions, thinly sliced and browned, or a squeeze of lemon.
Serve with rice.
