I always wondered if there were other parts of the matzoh you could eat.

LOL, kind of like Prairie Oysters, you mean? Well, I know that the other parts of the calf are edible, but we usually wait until they are finished out. That means fattening them up before market by feeding them grain.
The matzoh ball mix I have is kosher.

Vegetarians eat egg and you can make matzoh balls with an egg substitute and vegetable broth. Actually I am happy to have Schmaltz free foods!
Why not make it with Vegetable stock, and instead of the egg in the matzoh balls, add the meal, oil and for the binder, potato starch or flour and baking powder.
Use boiling water to soften the meal, mix all the ingredients then the water or tinned veg stock, and let it sit, I had a friend that was allergic to eggs, I was a chef for 20 yrs in Canada, and worked in a Kosher kitchen in one hotel, we had to find an alternative for a child one time and this works, they are not as fluffy or as big as one's will eggs, there is also, meringue powder, a form of dry egg white, sold at speciality store and bulk place were they sell cake decorating supplys, this could be an idea, but if your not using eggs at all the first way is the best.
