What are some good vegetarian cookbooks?

I want to get my brother a cookbook for christmas. He just became vegetarian and I don't know much about it since I am not.

The Vegetarian Meat and Potatoes Cookbook! It's got great, hearty recipes that fill you up, and it's 100% vegetarian (very vegan friendly as well). Some highlights include:

Chili Con Frijoles
Curried Lentil Loaf
Layered Vegetable Lasanga

Many guys I know have trouble feeling full off vegetarian food, and a book like this can really help your brother feel satisfied!

You can't go wrong with the Moosewood cook books, as far as I'm concerned. The recipes have all been delicious, the illustrations are adorable, and the writing style is fun.

I'd recommend the Moosewood books to anyone -- vegetarian or not.

It's Called "The Teen's Vegetarian Cookbook '' it's by: Judy Krizmanic.

Even if he is not a teen they still have good recipes.

anything by Linda McCartney!!! She does add more butter and cream than I would ever dream of using but her cooking is soooo good!!!

It's nice and mainstream, not laden down with "Warm lentil-tofu croquettes on a bed of seaweed," etc, and full of pictures, so it should be quite new-vegetarian-friendly. There're also a few more (see the bottom of the page) in the series; 'Cranks Light' is also good.
