Water in tofu?!


Question:

Water in tofu?

I usually discard the water that the tofu is packed in. But if I am making a soup (miso) can I add that water in the soup? Sort of like tofu broth?


Answers:
The water in tofu is to keep the tofu moist and fresh while at market. Discard the water and don't use it.

In fact, if you're planning on not using all the tofu and have to store it, you should replace the water, submerging the tofu, every two days because the water will get stale! That water is not used for cooking.

You can, but it often has a peculiar "funky" flavor. I don't know why, but suspect it has to do with the leftovers of the fermentation process.

Taste it, and be your own judge! There's certainly nothing harmful in it.

Yes you can add that water back in, it taste very good.

Yeah sure that would be a Good idea make sure you use good seasoning though. Most people say tofu tastes nasty but it's just because the person who cooked it doesn't know how to cook it correctly or doesn't use good seasonings.
