My absolutely favorite meat substitute are portobella mushrooms. I love grilling them, just like I would a hamburger, but you can use them in other ways as a meat substitute as well. They have a nice meaty flavor. Here's a good recipe for them:
Linguine with Portobello Mushrooms
Prep Time: 15 Minutes
Cook Time: 30 Minutes Ready In: 45 Minutes
Yields: 8 servings
"Meaty portobello mushroom slices are tossed with fresh herbs and linguine."
INGREDIENTS:
4 portobello mushroom caps
2 tablespoons extra virgin olive oil
1 pound linguine pasta
1 teaspoon red wine vinegar
1 teaspoon chopped fresh oregano 1 teaspoon chopped fresh basil
1/2 teaspoon chopped fresh rosemary
2 cloves garlic, peeled and crushed
2 teaspoons lemon juice
salt and pepper to taste
DIRECTIONS:
1. Preheat the oven broiler.
2. Bring a large pot of lightly salted water to a boil. Add linguine, and cook for 9 to 13 minutes or until al dente; drain.
3. Brush the mushrooms with 1/2 the olive oil, and arrange on a medium baking sheet. Broil in the prepared oven 6 to 8 minutes, turning frequently, until browned and tender.
4. Cut the mushrooms into 1/4 inch slices, and place in a medium bowl. Mix with the remaining olive oil, red wine vinegar, oregano, basil, rosemary, garlic, and lemon juice. Season with salt and pepper.
5. In a large bowl, toss together cooked linguine and the mushroom mixture.

Boca burger crumbles. I never use meat in chili anymore or for meatsauce. I am not vegeterian and love this product, but a co-worker who is one says she doesn't like it because it tastes too much like meat.
Super easy chili:
2 pouches Boca crumbles
1 can Chili Magic
2 cans diced tomatoes w/jalapeno peppers
mix in pot and simmer for 10 minutes.
Tofu -- grilled or sauteed
Quorn tenders are my favorite. Chciken is the last thing I gave up a few years back and quorn is a perfect substitute. You can hardly tell the difference.

Bocca burgers/crumbs are excellent! Many people I know who wouldn't dare claim to be vegetarian enjoy Bocca burgers. They can usually be found in the frozen food section.
The best all natural substitute is portabella mushrooms. They are good and have a lot of protein in them.
