Margarine?! asap.?!


Question:

Margarine?! asap.?

my mom wants cookies for us to eat while we are putting up the tree. I have everything Ill need for yummy vegan cookies except the margarine. It says to use margarine, but all the margarine at the grocery store my mom went to has milk or whey in it. I know for things like eggs there are replacements like cornstarch and water. is there anything like that for margarine/butter?

There is a veggie margarine called "Earth Balance" that I pick up at our local health store.

Pretty sure its 100% veggie...

applesauce (Applesauce can replace up to ? of the shortening in many recipes. Add with the liquid ingredients and reduce sugar in recipe if the applesauce is sweetened.) OR

pureed prunes (Pureed prunes can replace up to ? of the shortening in many recipes; it works especially well with chocolate. Add with the liquid ingredients.) OR

apple butter (Apple butter can replace up to ? of the shortening in many recipes, also reduce sugar in recipe if the apple butter is sweetened. Add with the liquid ingredients.)

you could try beef tallow. mcdonalds uses that in its world famous french fries. if its good enough for 2 billion tubbies, why not give it a go

Coconut oil.

Oil.

Any oil you have, but plain vegetable oil is better than something like olive oil that has a stronger taste.

Before my store carried Earth Balance (a vegan margarine), I used to buy lactose-free margarine which did not have any milk products in it. Most still had vitamin D3 in them (usually derived from animals, unlike D2 which is usually plant-based), but that was my only option for margarine at the time! (and the amount of D3 added to products is quite minute).

You could also try replacing the margarine with oil, but depending on the recipe, this may make the cookies too soft.
