Can anyone tell me the recipes containing no sugar and minimal oil?!

Question:

Can anyone tell me the recipes containing no sugar and minimal oil?

Answers:
Read my answer about fruit salad.

Also use a sweetener to replace sugar - Canderel is best. No aftertaste. If like me you are diabetic and did not know, honey is a high sugar food source and should be used with caution.

Grilled food uses minimal oil, or you could buy yourself a really good non-stick frying pan and just add a few drops. Wipe it around, and heat and then fry. Depending on what you cook, you might need to brush a little oil on to the meat, vegetables.

Stewing is another good way of minimizing oil/fat. Just fry off the meat as described above and then add all the vegetables etc. with liquid - say a tin of soup or tomatos and cover and cook for the required length of time. Invest in a slo-cooker. My mum was dubious but now she is hooked!!

There are a lot on this website : www.recipesforvegans.co.uk including;

Almond Sweets
Ingredients

cashew nuts
apricots
almond essence
vegan chocolate

These sugar free sweets can really help to finish off a delicious meal.

Use the same amount of cashew nuts and apricots and put in food processor and mix until smooth. Add almond essence and taste until the mixture has the flavour of marzipan.

Then form the mixture into small balls and dip in vegan carob or chocolate (to keep the sweets sugar free you can use sugar free chocolate). Place into small cake cases and put into the fridge to set.

Apple Puff Pastry

Ingredients

3 cooked bramley apples
50g sultanas
ready made puff pastry
cinnamon
soya mIlk
margarine

Grease the baking tray with margarine. Roll out the pasty to fit on your tray and lay on.

Take your bowl of cooked apples and mix it with the sultanas and cinnamon.
Spread the mixture into the middle third of your pastry leaving a small space at the top and bottom so it doesn't spill out.

Now cut the unused pastry on the sides into horizontal strips of even size.
Now plait the sides of the pasty over towards the middle from top to bottom until all the apple is covered. If the pastry doesn't stick that well then brush with soya milk to bind together. Push the pastry together at the top and bottom to prevent too much apple escaping.

Brush soya milk on the top of the pastry when finished so it will brown.
Bake in a preheated oven at 200 for 10 mins. If it isn't browned enough for you put back for a few more minutes until golden and crispy.

This will serve approximately 6 poeple and is lovely with soya cream or custard
