Barley malt syrup is a sweetener produced from sprouted barley, containing approximately 65 percent maltose, 30 percent complex carbohydrate, 3% protein. Malt syrup is dark brown, thick and sticky; and possesses a strong distinctive flavor, similar to that of molasses. It is about half as sweet as white sugar. Barley malt syrup is best used in combination with other natural sweeteners

It is similar to corn syrup and brown rice syrup, I like using Jaggery, it is a palm sugar product, like brown sugar, but made from the sap of the sugar palm, it has a toffee taste and is lower in sucrotes the proteins in sugar.

I also have found in some health food store a new product called naturally dehyrated cane syrup, they do not process the cane juice, they just heat it to a point it crystallizes and them crush it, the natural flavours and nutrients are still there.
