Mock Tuna for sandwich spread

INGREDIENTS:
1 (19 ounce) can garbanzo beans
2 tablespoons Vegannaise or any egg free Mayonnaise
2 teaspoons spicy brow mustard
1 tablespoon sweet pickle relish
2 green onions, chopped
Finely chopped celery
salt and pepper to taste

DIRECTIONS:
1. In a medium bowl, combine garbanzo beans, Mayonnaise, mustard, relish, chopped green onions, salt and pepper. Mix in a food processor.

Make a sandwich or use as a dip with vegetables.

Thai Tofu and veggie Curry Recipe
From Canadian Living magazine.

Serves 6

time to make 45 min 30 min prep
1 lb firm tofu or extra firm tofu, drained
1 cup broccoli florets
1 tablespoon vegetable oil
1 onion, sliced
2 garlic cloves, minced
2 teaspoons Thai red curry paste
14 ounces light coconut milk
1/2 cup vegetable stock
2 tablespoons soy sauce
1 tablespoon packed brown sugar
1 tablespoon soy sauce
1/2 teaspoon salt
1 sweet red pepper, thinly sliced
1/4 cup chopped fresh cilantro

1. Pat tofu dry with paper towels; cut into 3/4-inch (2 cm) cubes. Set aside.
2. Wash broccoli and make them into florets. Set aside.
3. In skillet, heat oil over medium heat; cook onion, garlic and curry paste, stirring occasionally, until onion is softened, about 5 minutes.
4. Add coconut milk, stock, soy sauce, sugar, and salt; bring to boil.
5. Reduce heat to low; partially cover and simmer until squash is almost tender, about 12 minutes.
6. Add red pepper; simmer for 5 minutes. Add tofu; simmer until heated through, about 2 minutes. Add Broccoli let simmer only 2 minutes. Otherwise it becomes too soft.
7. (Make-ahead: Let cool for 30 minutes. Refrigerate, uncovered, in airtight container until cold. Cover and refrigerate for up to 1 day. Reheat to continue.)
8. Stir in cilantro.

I blended firm silken tofu into some pasta sauce the other day, tossed in some broccoli, olives and whole wheat pasta.... Very tasty... nice and creamy... but no cheese!

Dunno about cafe food, but... I was surprised!

I'm with Becca! I love BBQ tofu! The 3 Dollar Cafe has an asian salad that has yummy tofu...just ask for it without chicken!

Tofu is so versatile! Silken tofu makes a great smoothie (1 block silken tofu + can of fruit + package of instant vanilla pudding mix + soy milk).

Chocolate PB pie:
Blend one block tofu + 3/4 cup sugar + 2/3 cup peanut butter + 4 blocks melted baker's chocolate, + 2-4 tbsp soymilk ...pour into a pie crust and let it set in the fridge.

Or simple baked tofu:
Slice extra firm tofu and press all of the water out with a towel. Place 1/4 cup low sodium soya sauce in the bottom of a baking dish. Set tofu in the soy sauce, flip after a couple of minutes. Sprinkle with garlic, and spices (cayenne, etc). Add a small amount of water to the pan (don't pour over tofu), just enough to cover the bottom of the pan. Bake at 350F for 25-30 minutes. This can be eaten as is, hot or cold, or used in a sandwich, rolled in nori, cubed on a salad, etc. Very versatile!

To give tofu a chewier texture, put the package in the freezer for a day or two before you use it. (It will turn a bit brownish)

My veggie neighbor shared a sandwich idea with me last summer. I had never tried tofu up until that point.
It's basically toasted bread with butter and mayo, 2 thin slices of firm tofu (I buy it with the herbs), a big fat slice of tomatoe and lots of salt and pepper.
Addictive.
.. to me, at least.
I also came up with a little "Chicken" ball recipe on my own.

You mash up your tofu and mix it with eggs (obviously not a recipe for anyone who doesn't eat eggs).
Then you mix in poultry seasoning, garlic, salt and pepper. Then you scoop some out with a spoon and roll it around in that shake n' bake mix (or just plain bread crumbs). Then you can either stick them in the oven to cook for a few minutes or fry them on the stove with a little oil.
They're especially good with sweet and sour sauce.

Gotta love tofu!
