Vegetarian Stew?

Hey everyone. I was wondering if anyone had a good vegetarian recipe for a stew that could be cooked in a crock-pot?

I was thinking about just putting together random things and spices but just wanted to get some more tried and true ideas.

I have a great one for you I sort of made up and it came out really good.

Hearty Autumn Vegetable Stew

Serves 2-3 but you can double recipe


6 New Potatoes, Quartered
1/2 bag baby carrots
1 onion, cut into chunks
1 can vegetable broth
1 can diced tomatoes w/ Italian Seasoning
2 Tablespoons chopped garlic
Salt to taste
**Quorn Tenders, Optional

Toss all together, except Quorn in crock pot and cook on low for
about 8 hours. This stew is actually best the next day!

If you add the Quorn, add them during the last 10 minutes of cooking.

I tried one in one of the 'Moosewood Restaurant' cookbooks years ago, and had moderate success. If you can find it, great. But.

'Moderate' is not a ringing endorsement.

I've had blah luck. (If you get a superior answer that works out, I want to hear about it.)

The best odds, I think, come from adapting a non-vegetarian recipe. Or a very simple one; I've been meaning to make this:

with different flavourings, though. A bowl of orange and cumin and excess olive does not quite do the sort of hearty, plain stew I want.

I realise the 'just remove the meat' sounds a bit ridiculous given all the "2lbs beef, plus a potato and half an onion" recipes out there, but look for a veg-heavy one. And add a boatload of mushrooms, and extra potatoes.

Assuming you have similarly simple tastes for most stews, this:

is probably about as reliable a vegetarian slow cooker stew as you're going to find on-line; their recipes are usually pretty well done. (At any rate, those Foodland Ontario people are doing a wonderful job of getting me to buy a lot of Ontario produce...)

Note all the "or"s in that recipe. The best stews usually are 'random things,' I think.

I'm a big fan of just tossing in what you've got.

I do it about once a week...

Over time, you realize what works, and what doesn't.

Warming Winter Stew
Ingredients

1 large potato
1 carrot
1 large onion
1 leek
1 tin chick peas or black eyes beans
vegetable stock cubes
marmite
vegetarian worcestershire sauce
tomato paste or sauce
I parsnip
2 sticks celery
1 sweet potato
peas

This stew can easily be made from any left over vegetables but it important to have potato, carrot and onion to give some sweetness to the gravy. Chop all of the vegetables to the same size pieces and put in a large saucepan.

Cover with boiling water and add 2 stock cubes, a spoonful of marmite, a teaspoon of vegetarian Worcestershire sauce and a squirt of sun-dried tomato paste or ketchup. Bring to the boil and simmer for 20 minutes. Then taste the gravy and season to taste.

Serve in warmed bowls with chunks of warm crusty bread buttered with vegan margarine.

You know what is amazing, I got a vegan chili mix from www.ed-foods.com and mixed in corn, tomatoes, and veggie "beef" crumbles, and it was DELICIOUS. That chili is really good with cornbread and soy cheese on top.
