There are TONS of great Vegetarian cookbooks out there. I own most of them . . . ;-)

As a good basic cookery book, I like Vegetarian Cooking for Everyone by Deborah Madison. Anything by Mollie Katzen is amazing -- she's the Moosewood Cookery lady and also has two great kids' veggie cookbooks out: Honest Pretzels and Pretend Soup. (http://www.molliekatzen.com/ )

For formal, I would recommend the cookbook from one of the premier vegetarian restaurants in the world (located in downtown San Francisco): The Millenium Cookbook. Their seitan sausage recipes are absolutely exquisite. ( http://www.millenniumrestaurant.com/rest... )

Oh, and indispensible and filled with wonderful stories is the Indian everyday-to-feast-cooking cookbook, Yamuna Devi's Lord Krishna's Cuisine: The Art of Indian Vegetarian Cooking. ( http://www.amazon.com/lord-krishnas-cuis... )

Beyond that, just look through used bookstores to stock up on your veggie library.

Diet for a Small Planet - an oldie but goody

Apart from the classics, "The Cranks Bible" is worth a look.

An Adventist friend gave me a great cookbook called "Country Life Natural Foods Something Better Nutrition Seminar Cookbook (no animal products). The recipes are simple and use stuff you generally have, or if not, is easy to pick up. It says that many of rhe recipes were created for, and are currently being used in Country Life Restaurants.

My favorites that I use all the time is Candle Cafe Cookbook (New York's Renowned Vegan Restaurant) and Vegan with a Vengeance (by Post Punk Kitchen's Isa Chandra Moskowitz).

P.S. I heard Isa had a new one out called Vegan Cupcakes take over the world, and the reviews have been awesome as it has some amazing cupcake recipes in it. Never boring! (Sorry, but in my opinion Moosewood is boring, and Millenium has way too complicated recipes for everyday food-but awesome to impress friends at a dinner party!).

I really like Deborah Madison's cookbooks because she uses great ingredients, and it's obvious that she's a real "foodie"

I'm not a fan of Moosewood, but I LOVE the Rebar Modern Food Cookbook. 95% of recipes are vegetarian (three or four include seafood) and most can be adapted to accomodate vegan diets. No franken-foods or artificial meats, just healthy fresh ingredients and lots of flavours!
