I love really soft tofu (cold) with soy sauce, lemon juice, ground ginger (fresh) and green onions. That's how I ate it as a kid.

Mabu Tofu. It's tofu with a HOT and spicy sauce.

I get this dish called Budda Delight and the way they prepare the tofu is excellent.

tofu in pineapple sauce, scrambled tofu and strawberry "no-cheese" cheesecake.

I love tofu in red sauce. from the northern restaurant but i'm in mainland china, its kind of spicy but delicious.
chinese make the best tofu dishes

Fried to a blackened crisp on the outside and served with crushed red pepper sauce, like at the world famous Fire Palace Restaurant in Changsha, Hunan, China.

I love tofu that has been frozen, then thawed and the liquid pressed out. Cut it into cubes and then marinate it with some baby carrots in soy sauce and a bit of canola oil. Roast it all together in an oven at about 425 until the carrots are tender, shaking the pan frequently during the cooking time. Put in small bowl and finish with a splash of rice wine vinegar, sesame oil and sliced green onions. Very good stuff! It came from a cooking magazine and I modified it, but I don't remember which one.

Other than that my favorite tofu dish was simply fresh tofu from Japantown in Sacramento (made fresh daily). I'd get the soft version, sprinkle a bit of sugar on it and eat it like custard.

I prefer hard tofu over soft tofu in Chinese food dishes. The Ruby Tuesday restaurant makes a great veggie burger. I sent them an email about the burger and they told me it is made with soy. I also like veggie hot dogs.

I love tofu. I have never met a tofu dish that I did not like. One of the best is tofu nachos at Moe's. I am not a vegetarian so I still eat cheese and this is wonderful.

I really like this dish from my local Thai place. It has the wide noodles, bean sprouts, fried tofu, green onions, lots of garlic and soy sauce. It's sooo good. If you're in Chicago it's called Tiparos Noodles Delight, at Tiparos which is just south of the intersection of Clark and North Avenue.

you gotta check out vegweb.com.

I grew up in an italian family so I really love it when my wife (we are both vegan) makes stuffed shells with tofu in place of ricotta cheese and she also makes a vegetable quiche with tofu and tofu-pumpkin pie. Just a few of my faves. Oooh tempeh is great too, I like to steam it and then mix it with some veganaise for sandwiches or dip.

Tofu Kebabs

Cut the tofu into small squares and thread onto kebab skewers or cocktail sticks.

Warm through on a griddle pan or barbeque.

Serve with barbeque sauce or peanut satay sauce. Satay sauce is best served warm (it is best to pour it over the tofu and microwave it for 2 minutes on high power)

Tofu dogs and burgers (call them veggie dogs and veggie burgers here).

I have not yet ventured into the land of cooking tofu from it's original form yet.
