Answers:
How about a potato bake? Just partially boil and slice some potatoes, carrots, onions, pumpkin and whatever else you like, lay them out in a baking dish (like a pyrex one) season them and cover with cheese sauce. Then grate the cheese on top, stick it in the oven and bake it till the veges are soft and it's hot enough to eat.

Cheese goes good in soup too.

Salad Caprese

2 large beefsteak tomatoes
1 pound fresh mozzarella
12 large basil leaves
Salt and freshly ground black pepper
Extra-virgin olive oil
Cut tomatoes into thick slices. Lay 2 slices on a plate.
Cut the fresh mozzarella in slices. Place a mozzarella slice on top of each tomato slice. Put a basil leaf on top of each stack.
Sprinkle salt and pepper over the top of the tomatoes and mozzarella slices. Drizzle extra-virgin olive oil and serve immediately

Any kind of pasta. Stuffed shells with ricotta (it's also a cheese), mozzarella and Parmesan are really good.
Oven-baked veggies are great when broiled with tomato sauce and mozzarella for couple seconds (think eggplant parmigiana).
It's also good in any kind of sandwich, and great in tomato salad with basil.
I love "fancy grilled cheese" sandwiches- you need 2 slices of dark thick bread, some olive oil, a slice of mozzarella and a slice of Brie (if you do not like Brie, 2 slices of mozzarella). Brush the bread with olive oil, and put one slice in a heated skillet. or pan (on medium/high)
Put a slice of mozzarella and the brie on top of. Cook until the cheese starts to melt, add a tomato, sprinkle with basil. Cover with the other slice of bread (also brushed with olive oil), turn the sandwich and cover with a lid (or a heavy plate) to seal it. Cook for a minute or a bit more, if you like it crispy.
It's not going to be sealed like normal grilled cheese sandwich, so it might be a bit messy to eat, but it's amazing b/c the cheese melts and the tomato tastes amazing with the cheese.

Most cheese contains rennet. Rennet is made from cow stomach. It seems counter productive to eat cheese and be a "vegetarian."
