Nut Roast with Mushroom Sauce


Ingredients

packet of nut roast
mushrooms
onions
garlic
salt
pepper




To make a shop bought nut roast more tasty try covering with a delicious mushroom sauce.

Fry some mushrooms,onions and garlic which have been finely chopped until golden brown. Then add some flour to the mixture to form a thick paste.

Then slowly add soya milk until the sauce is the required consistency. Season with salt and pepper and serve piping hot poured over generous slices of nut roast.

Roasted Vegetables
Ingredients

parsnips
red pepper
yellow pepper
corgette
onions
vegetable oil
garlic
salt

Use a selection of vegetables which are delicious roasted such as parnips, peppers, corgettes, onions etc.

Cube all the vegetables up into the same sized pieces and put in a roasting pan. Add enough oil to coat them all and season them with crushed garlic and salt. Make sure that you mix them up well so they are all evenly coated with oil.

Put them into a hot oven (200c) until golden brown. (they take about 30-60 minutes) Check regularly to make sure vegetables are still coated with oil and turn them to make sure they are evenly browned.

how about a big bowl of Minestrone soup and a garden salad with some crusty home baked bread

I love those giant mushrooms, stuff them with loads of different chopped up veggies, simmered in a tomato sauce, sprinkle with cheese and bake in the oven.

My favorite is a Middle Eastern dish of Falafel & Hummos with grilled vegies wrapped in warm Pita or Indian Nan.
Falafel mix is sold at any health food store, consists of dried chick Peas, herbs and spices, to which you add water, form into tiny little balls or Patties and fry, delicious nutty flavor loaded with protein.
Hummos also available store bought, but much better home made... In a blender or food processer blend together 1 can drained garbonzo beans, 1 clove garlic, juice of 1/2 lemon, 1/4 cup olive oil, and incorporate water to bring to a light peanut butter consistency, serve on a plate drizzled w/ olive oil, sprinkle light Paprika and parsley.
Uniformly slice Eggplant, Red Bell Pepper, Onion, and grill or saute to a near soft state.
Serve with warm pita, nan, or flour tortillas...enjoy.

It is an old time favorite: Beans and corn bread and fried potatoes with onions and garlic. I put onions and garlic in the beans along with packages of either onion soup mix or veggie broth tablets for flavor. Also a bay leaf.
Feeds a lot of people pretty cheap. Try using other countries food. Like bean burritos or the 7 layer job at taco bell. Ate it once and said, Hay I can make that!
Also did the same with a veggie pizza. I thought I can make one of those. In a hurry buy a all cheese pizza and add your stuff you like green pepper, olives, cooked onions, mushrooms from a can is all cooked and delicious. Get a bunch of cans of those cheap at Dollar store. If someone asks you out for dinner, there is always places you can go and get a salad or I usually say, Pizza hut and order vegetarian pizza. Love those things.
Try boca bugger or morningstar farms grillers, try all the veggie meats until you find the one you like. Lots of Italian places has sauce with out meat in it. Order spaghetti and cheese ravollis.
Usually I don't eat cheese but on a special occasion like this good looking guy asks you out?
My friend makes this great lasagne with artificial ground meat from morningstar farms veggie meats. Fresh spinach and 3 cheeses, no one yet she said notices the meat taste.

Company and they want the real thing? Keep a veggie meat burger and fry yours in onion and make you a hamburger and no one knows the difference. Go easy on the french fries lot's of calories. Just starting out? Use only vegetable oil or all vegetable shortening. Make sure nothing has lard. That is saturated fat and clogs arteries. Said somewhere in the bible when God allowed the eating of certain animals, don't eat the fat or the blood. We are only now finding out how harmful both is.

Vegetarian lasagna is one of my favourite because you can layer it is whatever you like.
I do mine with whole wheat lasagna pasta, that I pre-cook (almost al dente), and I get some tomato sauce at the supermarket (Ragu and Prego make vegetarian ones and even organic ones).
I like to add some bechamel sauce to it, it gives it a more creamy and rich taste (to make bechamel sauce, melt 2 tablespoon of butter in a pan, when melted add 2tbsp of flour and mix well, wisk for about two minutes, then add milk, around 2cups. It will thinken, then stop the stove and put it aside).
So layer: tomato sauce, then pasta, then more tomatoe sauce and filling: artichoke hearts, sautéed muschrooms/zucchinies, garlic, onions, cheese, bechamel sauce, pasta, other sauce, more filling, etc.
Usually you have 3 layerss of pasta and you top the last one with tomatoe sauce, a few veggies and cheese.

Cook at 350°F for about 60minutes. Cover for the first 45minutes.

Can't beat good old rice and beans.

Cook the black beans till they're soft and the liquid is rich and dark; I don't season it too much, just salt and pepper.

I like it with brown rice, then the beans on the rice, then diced tomatoes, diced red onion, chopped fresh cilantro, diced avocado with a little lime juice and salit on it, some finely chopped jalapeno if you like it spicy, and on top sour cream and sharp cheddar cheese or some other sharp cheese. You can leave out the sour cream and cheese if you want to reduce fat. Or use low-fat sour cream.

Falafel!!! with hummus on pitas. Buy Fantastic mix. It is wonderful.

We like to get the Green Giant frozen "Create a Meal" at the local grocery store. They have different flavors like Teriyaki and Schezuan. We add a container of fresh mushrooms to that and also a package of tofu (optional). This is served over hot rice. With that we will have vegetarian eggrolls. They sell them at the grocery store near the deli section. This meal is not only healthy but delicious. You are getting a good source of protein, vegetables and starch.

Try making a vegetarian pita pizza. You can use either wheat or white pita, make your own pizza sauce using tomato sauce with a little garlic salt, onion salt, and pepper. Then go crazy with the vegetables green onions, mushrooms, peppers, olives, tomatoes, purple onions,yes even broccoli, and squash, and then you can use regular cheese or vegan cheese. Also have a small green salad or pasta with garlic bread to the side. sounds good to me. Enjoy!!
