Inviting a vegetarian friend over?

He's had us over for dinner, so we'd like to do the same. However, we are not vegetarian, so we have no idea what to cook. Any good meatless pasta recipes? No tofu or eggplant please.

Make Hummus and serve with pita slices and baby carrots.
For the Main course serve Lentil Soup with Cornbread.

This is actually quite simple: make your pasta as you normally would, just leave out the meat! A good pasta sauce can be made with onions, garlic, green pepper, mushrooms, tomato sauce (the ind with spices already in it makes things easier!). You can add some TVP about 5-10 minutes before the sauce is done to add some protein and texture to the meal. Serve over whole grain pasta for a healthy meal.

I'm not sure how familiar you are with his eating habits - does he eat dairy products and eggs? (for example).

Let him eat STEAK!

How about making a vegetable Alfredo. Cook your pasta, saute up some cut up veggies in some oil and garlic, when they are tender add the drained pasta and a jar or two of Alfredo sauce and mix and heat.

Of course you can make meatless spaghetti also or any other pasta sauce you prefer just leave out the meat.
A nice tossed salad, some french bread and you're good to go. Don't forget the dessert. Burp.

search on the yahoo or got to www.foodnetwork.com or www.allrecipies.com and type in vegitarian, they should have lots of them or find an offical website for vegans or vegitarians, you might want to find out if he eats things that come from animals, such as eggs, milk etc, or if he is strictly vegan, eats no animal byproducts. I make vegetarian spaghetti all the time (coz I am a veggie ;) )
Fyvel's recipe is pretty good although I leave out the textured vegetable protein because I cannot get the brand I love here.

oh man. there's SO much you could cook that isn't pasta. Without being eggplant or tofu (which would really bite for me because I don't like either and I'm veg).

There are tons of meatless pasta recipes. Did you ever have angel hair pasta with garlic and olive oil? That's considered vegetarian. Toss it with steamed broccoli and bell pepper strips.

Think about it...does everything you cook have meat in it??

one of my favorites is meatless chili..
you can do 2 bowls..
and cook some meat separate..that can be added latter..at choice in a separte bowl and sauce pan.

add a nice salad..and some bread..
yum.. or some green fried tomatoes..
stuffed jalepeno's..

Really you have a variety of options. If you really want to do pasta you could make any of them and just not use meat in them. I make a vegetarian lasagna that usually goes over well. I put kidney beans, squash, boiled eggs, onions, and spinach in mine. What I do is mix sour cream and ricotta cheese together with steamed spinach. This makes it spread easier.
Another option for you to do is make Thai food. Many of those recipes don't have meat.
However when you have a vegetarian friend over for dinner the entire meal does not have to be vegetarian, just make sure that there are options available for them.

My favorite vegetarian pasta dish is Pesto, king of pasta sauces. You can find any recipe you like, they are tones out there. Just try to omit parmesan cheese because they contain rennet or Lipase (not vegetarian friendly). Most people love pesto pasta.
You can have some chopped sun dried tomatoes on the table (ones that are in oil). It is a good option to add to this dish.
