You need to find the GreenGhost guy! He dont come in the vegetarian section no more because of all the meateaters here but he knows how to cook better than anybody else! He even told me how to make eclairs without egg!!

applesauce. I'm not sure the exact amount to put in to sub the eggs, but you use applesauce in place.

Rich Chocolate Cake

Well the name says it all. This is the richest chocolate cake around. To make it a 2 layer cake, multiply the ingredients by one half and divide into 2 seperate springform pans. If you don't have springform pans, cover the bottoms in parchment paper or it will stick.

Equipment:
springform pans, 2 good sized bowls, a wisk, saucepan

Ingredients
3/4 cup whole wheat pastry flour
1 cup all purp unbleached flour
2 teaspoons baking powder
1 teaspoon baking soda
3/4 cup good cocoa powder
1/2 teaspoon salt
1 cup plain soymilk
1/2 cup canola oil
1 1/2 cups pure maple syrup
1 teaspoon apple cider vinegar
2 teaspoons vanilla


Directions
Preheat oven to 350 F. Spray a 9 inch springform pan with non stick cooking spray.

Sift together flours and baking powder and baking soda.

In a saucepan, heat the soymilk on low-medium heat. When it is slightly bubbling, add the cocoa powder and wisk well until it is dissolved. Remove from heat.

Combine the other liquid ingredients in a bowl and whisk well. Add the cocoa mixture and combine. Add the wet ingredients to the dry.

Pour batter into prepared pan, bake at 350 F for 25 minutes until a toothpick or butter knife comes out clean. Let cool completely and frost with your favorite frosting.

You can convert any cake recipe if you buy Ener-G Egg Replacer. You can find it at any health foods store such as Whole Foods or Earthfare. Many large grocery stores carry it to, such as Kroger. Remember to mix it separately with hot water. I usually will double the amount of powder and whip it until its fluffy.

Be careful, some egg replacers contain egg whites. I've used silken tofu or ground flaxseed and water for egg replacement in baking. I second the person who recommended the ppk. Invaluable site. Also check out Vegweb.com for yummy vegan cake recipes.

FRESH APPLE CAKE
Make one 9- by 13-inch cake, 12 or more servings

This is one of those foolproof recipes that I rely on quite often when I want an easy and tasty homemade dessert for guests.

* 2 cups whole wheat pastry flour
* 1/3 cup natural granulated sugar
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1 teaspoon cinnamon
* 1/2 teaspoon salt
* 1/2 cup vanilla soy yogurt
* 3/4 cup undiluted organic apple juice concentrate
* 1/4 cup safflower oil
* 1 teaspoon vanilla extract
* 2 l/2 cups peeled apple, any baking variety, cut into l/2-inch dice
* 1/2 cup chopped walnuts

Preheat the oven to 350 degrees.

Combine the first 6 (dry) ingredients in a mixing bowl.

In another bowl, combine the yogurt, juice concentrate, oil, and vanilla and stir vigorously to combine. Make a well in the center of the dry ingredients and pour in the wet mixture. Stir together until thoroughly combined, then stir in the apples and walnuts.

Pour into a lightly oiled 9- by 13-inch baking pan. Bake for 30 to 35 minutes, or until golden and a knife inserted into the center tests clean.

Yes, you CAN use applesauce as a substitute for eggs! I do it all the time in cookies and banana breads, muffins, etc. Just use 1/4 cup applesauce for every egg. I have never tried this in a cake, as I'm not sure it would raise enough. Here is a good recipe that I like:

Chocolate cake:

*I've heard that this does not cook well in a bundt pan. When I make it, I divide it into two small round pans and then make a layer cake (put frosting between the layers).

Vegan Chocolate Frosting

Ingredients (use vegan versions):

1 cup margarine
4 cups sugar (make your own if you want - blend sugar and cornstarch)
2 tablespoon vanilla
4 tablespoon soymilk
1/2 cup cocoa powder ( or more)
dash of salt (I usually leave this out)

Directions:

Margarine should be at room temperature when being placed in bowl. Blend until mushy, and then add vegan powdered sugar, salt, vanilla, chocolate and soymilk. You can add in more soymilk to make it a bit smoother but not too much. Spread on cake and enjoy.
