Easy vegetarian recipes?
I'm a lacto ovo vegetarian, and I got a little bored of eating the same food. Does anyone have any vegetarian recipes that are easy to make with easy to find ingredients? I've seen many recipes that sound great and very yummy, but the ingredients are a little strange and quite hard to find

alright, i am not a vegetarian but my friend is a vegan and he loves it when i make him 'stir-fry'. basically i cut up brocolli, carrot n potatos (real thin). i put them on a frying pan and let em cook for a bit, then add a little water to steam em out for about 5 mins and get rid of the water, and keep them on the pan. i add thyme to it, and the smallest ammount of oregano. he doesn;t eat cheese so i never add cheese, but i dunno what 'lacto ovo' means sorry, but if you want while the veggies are on the frying pan let the cheese melt over them... hope i helped!
If you're still allowing yourself milk, eggs and other dairy/animal derivatives, you should be able to find lots of recipes for yourself.

Different pasta dishes, cookies, recipes containing tofu; there's so many ways to cook it... Um, vegetarian quiche, chili, borscht (beet soup, very-very good).
Go to the allrecipes.com website and type in 'vegan' or 'vegetarian'. You should get lots of things that suit your needs and lifestyle.
Heck, look up any recipe that sounds good and just substitute the meat with more veggies or, again, tofu.

Cooked Rice
Sundried Tomatoes
Onion
Garlic
Olive Oil
Capsicum
Mushroom
Zucchini
Fetta
Dried Oregano
Dice and fry all vegetables
Add Cooked Rice
A little Tomato Sauce (Italian Style)
Add some diced fetta
Halve eggplant scoop out middle stuff with mixture and bake about 20-25 minutes till eggplant cooked.
Simple easy and quick.
Here's my favorite: Frito, Chili Cheese Burrito
It's easy and quick and lasts for a while.
You'll need tortilla breads, Frito Corn Chips, cheese, and a can of chili beans (you can also add in soy crumbles... looks like ground meat).
1. Heat the chili beans in a pot (add the crumbles here if you
are using it).
2. Heat a tortilla bread for about 10 seconds (just to make it soft)
3. On the tortilla, spread some chili beans, sprinkle some
cheese, then sprinkle a handful or so of corn chips.
4. Fold up the tortilla and enjoy the deliciousness.

Tex-Mex Salad with Chili Vinaigrette
Makes 8 to 10 servings
Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalape?o peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)
Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalape?o pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.
Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

INGREDIENTS
1 cup semolina
1 cup sugar
1 cup curds
1 teaspoon baking soda
4 tablespoons melted oil
1 teaspoon vanilla essence
4 cardamoms (powdered)
4 tablespoons chopped nuts
10-15 raisins
DIRECTIONS
Mix semolina, sugar and curd.
Stir well.
Add raisins, nuts, powdered cardamom and vanilla essence.
Pre-heat oven to 300 degrees Fahrenhit.
Grease a medium size pan with butter.
Pour in the mixture and bake for 30-45 minutes.
