Ingredients

-1 Baigan (Brinjal or Chinese eggplant)
-Curry leaves
-Panch Puran (Mustard, Fenugreek, Cumin, KalaJeera, fennel seed )
-250gm of Curd (or Yogurt)
-1 tea spoon of Sugar
-Salt to taste
-2 Green chilies
-Small piece of Ginger
-A pinch of turmeric
-Oil for frying

Method:-

1) Cut brinjal into thin 2-inch long pieces.
2) Mix turmeric and salt in brinjal
3) Deep fry the brinjal pieces and keep aside.
4) Mix yogurt gently with sugar, salt and little water and fried brinjals.
5) Heat one table spoon of oil in a pan and put the panch puran and allow them to splutter. Add green chillies and ginger and fry them and then add curry leaves.
6) Then add it to yogurt and serve.

i like baigan bharta!!
but i have no idea how to make them!!!!

The best one yet that I know of is from Sameen Rushdie's Indian Cookery book. It's called bhaingan ka raita. Since she's Kashmiri, her recipe should be authentic.

1 medium Baigan (eggplant)
1/2 cup Cooked green peas
1 Finely chopped onions
1 Finely chopped tomatoes
1 Finely chopped green chilli
1/2 tsp Red chilli powder
1/2 tsp Garam Masala Powder
1/4 tsp Turmeric Powder
3 tbsp Vegetable oil
Salt to taste
Chopped green coriander leaves for garnishing


Preparation of baigan ka bharta :
Brush baigan (eggplant) with oil and roast it on a gas burner over medium heat.
Frequently turn the eggplant upside down, until fully roasted.
Once done, hold it under cold running water or in a bowl full of water. Cool it and peel off the blackened skin.
Mash the flesh.
Heat oil in a pan / kadhai . Add green chilli and onion and fry over medium heat until light golden brown.
Add red chilli powder, turmeric powder, garam masala and salt and stir. Add tomatoes and cook until tender.
Add green peas and mashed baigan (eggplant). Stir well. Fry the baigan bhartha for 5-7 minutes over medium heat.
Garnish the baigan bharta with green coriander leaves and serve hot.

First make Baigan Subji-It will take hardly 15 minutes.
First cut a baigan in half inch pcs and drop them into a cold water until you finish cutting of all the baigan.Than heat the fry pan - add cooking oil one table spoon-add spices like Turmeric-Chili powder-custard seeds ( rai) and allow it for a 1 minute-add baigan into it and shake it cover it-add salt-allow it to cook for 10 minutes and add Dahi ( curds) and shake it very well.To make it more tasty add Dhania-cumin powder(dhana-Jeeru) and some Garam Masala and stirr it very well.Allow for final cooking 3 minutes only.and remove the fry pan from the gas or a Chulla and allow it to cool down.
