Is Seitan really concidered protein?

I need a good protein dish, as I have anemia, and also hate meat, and thought this would be great

Yes, it is protein. However, as far as I can tell, it is not a complete source of protein since it only contains the proteins available in wheat (primarily gliadin and glutenin), which lack some of the essential amino acids. If you aren't eating meat or dairy, you'll want to make sure that you are getting protein from a number of different sources. That is, don't rely entirely on seitan for your protein.

Yes! Seitan is very high in protein. An 85-gram serving of seitan (the 'traditional' variety from White Wave) contains a whopping 18 grams of protein. That's about 50% more protein than in a similar portion of tofu.

If your anemic, you need iron.

It's high in protein but as pointed out above it lacks some amino acids. Supplement it with a bean or legume-based protein to complete it. For example, seitan and tofu. Or seitan and lentils. Use your imagination.
