sections, each with an eye, and each will grow a new potatoe plant.

No, they are the roots sprouting for the potato (which is a seed) to grow. Most people believe potatoes are better to bake once the eyes start to grow because they are more tender, only cut that part off becaues it looks kinda freaky and you don't want to eat roots.

Anything green on a potatoes is poisonous. Even the skins if green . There is not enought to kill you but it can give you a upset tummy
