Looking for an easy hot and sour soup?!

Looking for an easy hot and sour soup?

I have been having a big craving for this awesome soup lately and figured I should save some money by making it myself. I'm looking for a simple recipe that is vegetarian (eggs are ok). I will probably leave out the mushrooms though.

I've googled but haven't come across a recipe I like.

Anyone have one?

1 cake tofu
1/2 cup bamboo shoots
handful of Chinese dried black mushrooms or fresh mushrooms
6 cups water or veggie broth
1 teaspoon salt, or to taste
1 teaspoon brown sugar
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 teaspoon sesame oil
1 Tbsp cornstarch dissolved in 1/4 cup water
1 egg, beaten
1 green onion, finely chopped
pepper to taste
Hot chili oil, to taste, optional

Directions:

Cut tofu into small squares. Cut bamboo shoots into thin strips and then into fine slices.

Bring the water to a boil. When it is boiling, add the bamboo shoots, mushrooms. Stir. Add the tofu.
Stir in the salt, sugar, soy sauce and vinegar and sesame oil.
Test the broth and adjust the taste if desired.
Mix the cornstarch and water. Slowly pour the cornstarch mixture into the soup, stirring while it is being added. Let the broth come back to a boil. As soon as it is boiling, remove the broth from the stove.

Slowly drop in the beaten egg, stirring in one direction at the same time. Add the green onion and the white pepper to taste. Drizzle with chili oil if desired. Serve hot.

This is long, but the flavor is worth it!
Make a big batch and freeze it!

Take a package of Knorr Hot and Sour soup and add shrimp, ketchup, soya sauce, garlic, chopped celery, diced carrots and waterchestnuts. Boil and thicken with cornstarch. Serve with a vegetable stirfry made out of curried rice.

Hot and Sour Soup with Tofu

Ingredients

(8 servings)

3 tb Vegetable oil
2 lg Sweet red peppers, cored, seeded and cut into 3/4"x1/4" strips (about 3/4 cup)
1 sm Bunch green onions, cut diagonally into 3/4" pieces (about 1 1/2 cups)
2 c Chicken broth, canned OR homemade
2 c Vegetable stock OR water (stock recipe in next post)
2 tb Soy sauce
2 ts Red wine vinegar
1/2 ts Crushed red pepper flakes
1/4 ts Salt
1/8 ts Pepper
2 tb Cornstarch
3 tb Water
1 ts Oriental sesame oil
1/2 lb Snow peas, fresh or frozen
1 lb Firm tofu, drained and cut into 1/2" cubes
1 cn (8 oz.) sliced water chestnuts, drained


Instructions

Makes 8 Servings
Heat oil in large saucepan over medium-high heat. Add peppera snd onion; stir fry about 5 minutes.
Add chicken broth, vegetable stock and soy sauce. Bring to boiling. Lower heat; simmer for about 5 minutes. Stir together vinegar, red pepper flakes, salt, pepper, cornstarch, water and sesame oil in a small bowl until smooth. Add to soup with fresh snow peas; cook for about 5 minutes or until thickened and bubbly. Add tofu, frozen snow peas if using, and water chestnuts. Gently heat through.
Makes 8 servings (about 8 cups)



Hot and Sour Mushroom Soup Tom Yam Het

Ingredients

(3 servings)

3 c Vegetable stock
1 ts Nam Prik Pow sauce
1 Inch Lemon grass - finely chopped into rings
3 Kaffir lime leaves - roughly torn into three
1 ts Sugar
2 tb Lemon juice
2 oz Oyster mushrooms - coarsely separated OR- button mushrooms
2 sm Fresh red or green chilis (more if desired) - crushed to split open

TO GARNISH:
Coriander leaves


Instructions

In a large pan, bring the vegetable stock to the boil and stir in the Nam Prik Pow sauce. Add the remaining ingredients and simmer, stirring well until the mushrooms are just cooked but still al dente. Pour into a serving bowl and garnish with coriander leaves

Recipe-zaar has several recipes for vegetarian hot and sour soup. Haven't tried any of them myself, but most look easy enough.

Take a can of cold soup, does not matter what brand. have the neighbors dog do what he does best. mix it up and POOF!!!!!!!!!! sour hot soup.Suck it up before it gets cold.
